How to Make Easy Cilantro Lime Corn on a Stove Top

Aunt Lou here.

This Easy Cilantro Lime Corn recipe is the perfect side to go with your favorite Mexican inspired main dishes. On top of being a wonderfully flavorful side dish, it is incredibly easy to put together and it cooks up quickly. I just love a recipe that checks all three of those boxes!

If you really love the taste of lime, you can serve this with a non-slotted spoon. However, serving it with plenty of juices really does amp up the lime flavor. When it is served with a non-slotted spoon, you still have plenty of lime flavor without it being super strong. So, serve it how you will like it best!

What You Will Need for Easy Cilantro Lime Corn

Ingredients Needed

  • 12 oz bag frozen corn, frozen
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 stick butter, sliced
  • 2 tablespoons lime juice, fresh squeezed (about 1 lime)
  • 1/2 cup water
  • 2 cloves garlic, minced
  • salt and pepper to taste

Equipment Needed

  • Knife
  • Cutting board
  • Measuring cup
  • Measuring spoon (or this awesome teeny tiny measuring cup)
  • Garlic press
  • Stirring spatula (You need this to keep the cilantro off the sides of the saucepan when you stir through the cooking time.)
  • Medium saucepan
  • Slotted serving spoon

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 10 minutes or less on medium high heat until everything comes to a boil, reduce heat to medium and keep at a low boil for 5 minutes, stirring occasionally
