I loved momma’s cheesy potatoes when I was growing up. They have always been one of my favorite side dishes she makes. I figured that it might just work in an electric pressure cooker. Guess what?! I was right! You are going to love this super easy recipe!

Instant Pot Cheesy Potatoes Recipe
Instant Pot Cheesy Potatoes
Ingredients
- 6 potatoes peeled and cut into quarters
- 1/3 cups onion diced
- 8 oz Velveeta (1/4 of a 32 oz block) cubed small
- 1 cups milk
- salt and pepper to taste
- 2 cups water
Instructions
- Put your water, potato quarters, diced onion in your 6-quart Instant Pot
- Seal and cook on high pressure for 1 minute, quick release and drain excess water
- Put your drained potatoes and onions back in your Instant Pot and turn on Saute
- Add in your remaining ingredients and gently stir until well combined and cheese is melted
- Turn Saute off and place potatoes in serving dish

Can this dish be doubled in the same 6quart?
I haven’t tried doubling this recipe so I can’t say for sure if 12 potatoes would fit. If they are medium size potatoes, they might fit. Doubling the recipe might also change the cooking time. So, make sure you watch it closely the first time you make it to adjust the cooking time as needed. If you give it a try, let me know how it goes.
