How to Make Italian Mozzarella Chicken in an Electric Pressure Cooker

School is back in full swing now, and I’m not sure if I’m coming or going some nights. Most nights I need dinner fast. Sound familiar? We love our Crock Pot Italian Mozzarella Chicken, so with the chaos of life, I knew I wanted to try this recipe out in my electric pressure cooker and share it with you!

Instant Pot Italian Mozzarella Chicken Recipe
Instant Pot Italian Mozzarella Chicken
Ingredients
- 3 boneless skinless chicken breasts
- salt and pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 cloves garlic minced
- 24 oz jar marinara sauce
- 1/2 cup chicken broth
- 1 cup mozzarella cheese
- penne pasta cooked
- 1/4 cup green olives with pimentos chopped
- 1 cup fresh grated Parmesan cheese
Instructions
- Sprinkle chicken breasts with seasonings on both sides
- Place seasoned chicken breasts in a lightly greased instant pot
- Sprinkle garlic evenly on top of the chicken breasts and cover with marinara sauce
- Pour your chicken broth in your marinara sauce jar, shake to rinse it out, pour around your chicken
- Seal and cook on manual high for 10 minutes, chicken should be cooked through and tender
- Natural release for 10 minutes, then quick release
- Place chicken breasts on a lightly greased baking sheet and sprinkle with mozzarella cheese, set aside
- Add your olives and Parmesan cheese to your sauce in your instant pot, stir and heat through on saute
- Place your baking sheet with your chicken in your broiler for 2-3 mins until the cheese is melted and golden (keep a close watch so it doesn't burn)
- Pour your sauce over your cooked pasta and mix well
- Serve chicken over pasta
