How to Make Lemon Cream Cheese Cookie Spoon Cake in an Oven

When making this Lemon Cream Cheese Cookie Spoon Cake recipe for my oven, I may or may not have been distracted and in a hurry. So, when I made the filling to put on top of the cookie cake dough, I forgot to add the egg. At first, I had an “Oh no!” kind of moment, but then we tried it. It was delicious. That means my oopsie turned into a yummy. Both of my kids devoured it, and Michael and I loved it. My oldest told me it was amazing and tasted like a lemon cookie with a yummy pudding filling. For me, it reminded me a little bit of custard and a little bit of pudding at the same time. It is so good! While the center is different from the original recipe, it is really good. I hope you love it as much as we do.

What You Will Need for Lemon Cream Cheese Cookie Spoon Cake (Oven Recipe)
Ingredients Needed
- 15.25 oz box lemon cake mix, unprepared
- 1 egg
- 1/2 cup butter, melted
- 8 oz tub whipped cream cheese
- 2 cup powdered sugar
- 1 tablespoon vanilla extract
Equipment Needed
- Stand mixer or large mixing bowl and hand mixer
- Stirring spatulas
- 8 inch square, glass baking dish
- Small to medium mixing bowl
- Microwave safe coffee cup or microwave safe bowl (for melting butter)
- Measuring cup
- Measuring spoon
Time Needed
- Prep Time: 10 to 15 minutes, plus however much longer it takes to bring your oven to 350 degrees Fahrenheit
- Baking Time: 21 to 25 minutes, rotating your baking dish halfway through the baking time, if your oven does not cook evenly (It is done when the edges are slightly golden.)

Lemon Cream Cheese Cookie Spoon Cake (Oven Recipe)
Ingredients
- 15.25 oz pkg. lemon cake mix unprepared
- 1 large egg
- 1/2 cup melted butter
- 8 oz tub whipped cream cheese
- 2 cups powdered sugar
- 1 tablespoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Mix together 15.25 oz pkg. lemon cake mix, 1 large egg and 1/2 cup melted butter in a large bowl with a hand mixer or with a stand mixer.ย
- Press your dough into the bottom of a lightly greased 8 x 8 glass baking dish so that the sides are thicker than the middle and set aside.
- In a different bowl, mix together 8 oz tub whipped cream cheese, 2 cups powdered sugar and 1 tablespoon vanilla extract until smooth.
- Spoon your cream cheese mixture on top of your dough and spread evenly.
- Bake for 23-27 minutes, turning your baking dish halfway through the baking time, if your oven does not cook evenly. It is done when the edges are lightly browned.
Notes
- The cream cheese mixture makes this more of a spoon cake than a slice cake, but it is amazing. Trust me!
