How to Make Lemon Cream Cheese Cookie Spoon Cake in a Crock Pot

A while back, I made this Crock Pot Cream Cheese Cookie Spoon Cake, and one of our readers, Little T, mentioned the idea of making it with a lemon cake mix instead of a yellow cake mix. Since I love lemon flavored desserts, I thought this was a great idea! We gave it a try today, and the results were delicious. This recipe is a fun one to make with kids. My 9 year old daughter helped me put this together, and we had a great time making it.
When baking in a crock pot, it is extremely important that you know your slow cooker very well. If your slow cooker cooks hot, the edges will burn before the center has time to cook completely. Also, if your crock pot cooks unevenly, you will want to rotate your insert halfway through the cooking time to make sure that the entire cake will cook up nicely.
What You Will Need for Lemon Crock Pot Cream Cheese Cookie Spoon Cake
Ingredients Needed
- 15.25 oz lemon cake mix, unprepared
- 2 large eggs, divided
- 1/2 cup butter, melted
- 8 oz block of cream cheese, softened
- 2 cups powdered sugar
- 1 tablespoon vanilla extract
- Cooking Spray
Equipment Needed
- Butter knife
- Cutting board
- Small microwaveable bowl or coffee cup
- Measuring cup
- Measuring spoon
- Two medium bowls and hand mixer or stand mixer (I used my stand mixer and washed the bowl between making the two different mixtures of this recipe.)
- Stirring spatulas
- 6 quart slow cooker (Make sure you use slow cooker you know does not cook hot.)
- Paper towels or tea towels
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 hour and 15 minutes to 1 hour and 45 minutes on high, rotating your insert halfway through cooking time (Mine was perfect at about 1 hour and 20 minutes.)
- Cooling Time: 10 minutes

Lemon Crock Pot Cream Cheese Cookie Spoon Cake
Ingredients
- 15.25 oz pkg. lemon cake mix unprepared
- 2 large eggs divided
- 1/2 cup butter melted
- 8 oz pkg cream cheese
- 2 cups powdered sugar
- 1 tablespoon vanilla extract
Instructions
- Mix together your cake mix, one egg and butter in a large bowl or with a mixer.
- Press your batter into the bottom of a lightly greased 6-quart crock pot and set aside.
- In a different bowl, mix together your remaining egg, cream cheese, powdered sugar and vanilla until smooth (I used my mixer.)
- Pour your cream cheese mixture on top of your batter and spread evenly.
- Place a couple paper towels or a tea towel tightly under your lid, cover and cook on high for 1 hour and 15 minutes to 1 hour and 45 minutes, until your sides are lightly golden and the center is set. (Turn your insert halfway through your cooking time if your slow cooker does not cook evenly.)
- Remove your insert and set on hot pad for 10 minutes to cool before serving.
Notes
- The paper towels or tea towel under you lid will keep the moisture that gathers on the lid from dripping on your cake. You’ll want to make sure that you pull them nice and tight so they don’t dip down into your cake.
- The cream cheese mixture makes this more of a spoon cake than a slice cake, but it is amazing. Trust me!
- If your slow cooker doesn’t cook evenly, you’ll want to rotate the insert about halfway through. No one wants a cake that is burnt on one side and not done on the other!
