How to Make Melt In Your Mouth Roast Dinner in a Crock Pot

Aunt Lou here.

This Melt In Your Mouth Crock Pot Roast Dinner recipe is a great variation of a classic roast with potatoes and carrots. The beef is fall apart tender alongside fork tender potatoes and carrots. I love to take the cooking juices and spoon them over my roast. The taste is amazing!

When I made this one pot meal, I used a full bag of baby carrots. To be honest, I use baby carrots because I hate to scrub, peel and cut carrots. I like that I can just throw the baby carrots in without all the extra work. Also, if the members of your family fight over the carrots as much as mine do, I highly recommend using the full 16 oz bag of baby carrots. With the full bag of carrots, everyone can have all the carrots they want!

What You Will Need for Melt In Your Mouth Crock Pot Roast Dinner

Ingredients Needed

  • 3 lb beef roast
  • 16 oz bag baby carrots
  • 4 medium size Russet potatoes, peeled and cut into wedges
  • 12 oz jar beef gravy
  • 1/2 cup water
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Equipment Needed

  • Vegetable Peeler
  • Sharp knife
  • Cutting board
  • Measuring cup
  • Measuring spoon
  • Wooden spoon
  • 6 quart slow cooker

Time Needed

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 8 to 10 hours on low (With beef recipes like this one, I do not recommend cooking the recipe on high. Your results will be more fall apart, fork tender if you cook it on low. On high, that does not always happen.)
