How to Make Good Gravy Roast Dinner in a Crock Pot

We love all the Good Gravy recipes (you can find them here). The flavors are just wonderful together. We also love one pot meals. (Psst…if you love one pot meals, you can find some of our favorite one pot meals here.) So, it only seemed natural to make this Good Gravy Crock Pot Dinner! You have a delicious roast, potatoes and carrots all in one crock pot. It is easy and delicious!
In my house, carrots are a favorite veggie. My kiddos like to eat them raw dipped in ranch or cooked. One of their favorite ways to eat cooked carrots is in a roast. Since they usually want as many carrots as they can get, I put a full 16 ounce bag in with my roast. You can adjust the amount of carrots and potatoes to the liking of your family.
What You Will Need for Good Gravy Crock Pot Roast Dinner
Ingredients Needed
- 3 lb beef roast
- 10.75 oz can beefy mushroom soup (or golden mushroom soup)
- 10.75 oz can cream of mushroom
- 1 oz ranch dip mix packet
- 1 oz brown gravy mix packet
- 1 cup beef broth
- Pepper Jack Cheese
- 16 oz bag baby carrots
- 5 potatoes, peeled and cut into wedges
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Spoon
- Measuring cup
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 8 to 10 hours on low (We do not recommend cooking a beef roast on high. If you cook it on low, your results will be more tender and juicy than if you cook it on high.)

Good Gravy Crock Pot Roast Dinner
Ingredients
- 3 lb chuck roast
- 10.75 oz can beefy mushroom soup
- 10.75 oz can cream of mushroom soup
- 1 oz ranch dip mix
- 1 oz brown gravy mix packet
- 1/4 cup beef broth
- Pepper Jack Cheese
- 16 oz bag baby carrots
- 5 medium Russet Potatoes peeled and cut into wedges
Instructions
- Place your potatoes and carrots in the bottom of your 6-quart slow cooker.
- Put your roast on top of your veggies.
- Pour your soups on top.
- Sprinkle your mixes on top of the soups.
- Use your broth to rinse out the can of cream of mushroom soup and drizzle over the top of your mixes.
- Cover your roast with slices of pepper jack cheese.
- Cover and cook on low for 8-10 hours (high is not recommended for a fall-apart tender roast).
- Stir the melted cheese into your gravy.
- If your gravy isn't thick enough, tear up more cheese slices into small pieces and put them in your gravy, cover and cook on high until the cheese is melted and stir again.
Notes
- If you want to thicken your gravy, you can add in more cheese, cover and wait for the cheese to melt and stir it in.
