Meal Planning on a Budget
This week we will be focusing our budget around the addition of veggies, pasta, beans and rice to make a meal more filling and budget friendly. This can be done by serving your main dish with (or over the top of) the veggies, pasta, beans or rice or by including them in a casserole. We will do a little bit of both. Since these extras are generally cheaper per serving than meat, they are a great way to make your grocery dollar go farther.
Dried beans and rice are two things that can be bought in bulk. By buying them in bulk, you can get a lower price per ounce and not have to worry about running out any time soon. We love basmati rice around here and use it as a side with many of our meals. So, where I buy my basmati rice, the 20 pound bag ends up being around five cents per ounce. In comparison, the two pound bag of basmati rice, at the same store, runs around 10 cents per ounce. Saving half is pretty awesome. Granted, it doesn’t add up to a huge amount of money in the grand scheme of things, but when you save money in many little ways, it can add up quickly!

Monday: Crock Pot Chicken Tortilla Casserole
Tuesday: Leftovers from Monday with Crock Pot Refried Beans
Wednesday: Crock Pot Pizza Casserole
Thursday: Leftovers from Wednesday with Air Fryer Cheesy Garlic Bread (Ninja Foodi)
Friday: Crock Pot Chicken Rice Harvest Soup
