How to Make Creamed Spinach Chicken in a Crock Pot

One thing I love about this Crock Pot Creamed Spinach Chicken recipe is that you get a serving of veggies without even really realizing it. The spinach and chicken are combined with the delicious creamy sauce so well that you are getting a little bit of everything in each bite.
Now, my kiddos are kids and weren’t so sure about eating something with chopped spinach in it. However, after they took the first bite, they were sold! As a picky eater myself, I can relate to being hesitant when trying something new. This one has my picky eater stamp of approval. It is so yummy!
What You Will Need for Crock Pot Creamed Spinach Chicken
Ingredients Needed
- 3 lbs boneless, skinless chicken thighs, trimmed and cut into bite size cubes
- 24 oz frozen chopped spinach (2 – 12 oz bags)
- 1/4 cup butter, melted
- 1/2 cup cream cheese, softened
- 10.5 oz can cream of chicken soup
- 1 oz package Italian dressing mix
Equipment Needed
- Sharp knife
- Cutting board
- Large bowl
- Small microwave safe bowl or coffee cup
- Can opener
- Medium mixing bowl and electric hand mixer or stand mixer
- Stirring spatula
- 6 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring once or twice during the cooking time using a stirring spatula to scrape the sides of your crock pot insert as you stir

Crock Pot Creamed Spinach Chicken
Ingredients
- 3 lbs boneless skinless chicken thighs trimmed and cut into bite size cubes
- 24 oz frozen chopped spinach (2 – 12 oz pkgs)
- ¼ Cup Butter Melted
- ½ Cup Cream Cheese Softened
- 10.5 oz can cream of chicken soup
- 1 oz Package Italian Dressing Mix
Instructions
- Place your cut up chicken in the bottom of a 6 quart crock pot.
- Squeeze out the liquid of your thawed spinach.
- Place your spinach on top of your chicken.
- Put your remaining ingredients in a mixer and mix until completely combined.
- Spoon your cream cheese mixture on top of everything and gently mix with your spinach and chicken with a stirring spatula until well combined, scraping the sides of your insert so there isn't any cream cheese mixture up on the sides above all the ingredients.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring once or twice throughout the cooking time.
