How to Make Fiesta Roast Dinner in a Crock Pot

A while back I made a Crock Pot Fiesta Roast that my family loved. When I recently came across a comment from reader Lowell A. asking if you could add potatoes, carrots and onions to this recipe, I knew I had to try it! The results are this amazing Crock Pot Fiesta Roast Dinner recipe. It is so yummy!
If you have read many of my roast recipes, you will know that I love me a good old fashioned roast. Our Perfect Crock Pot Roast recipe is Momma’s tried and true recipe that we have used for years and is well known to our family as my favorite roast recipe. However, this recipe was a nice change from the traditional. The flavors were amazing, and it was easy to put together. That makes it a winner in my book!
What You Will Need
Ingredients Needed
- 2.5 lb beef roast
- 20 oz tomatoes with chiles, undrained (2 – 10 oz cans)
- 1 oz pkg taco seasoning
- 16 oz bag baby carrots
- 5 medium Russet potatoes, peeled and sliced into long thin wedges
- 1 onion, cut into fourths
Equipment Needed
- Can opener
- Vegetable peeler
- Sharp knife
- Cutting board
- 6 quart slow cooker
Time Needed
- Prep Time: 10 to 15 minutes (It all depends on how quickly you can peel and cut your potatoes. If you are slow like me, it will be closer to 15 minutes. If you are like Momma and super fast, it will be closer to 10 minutes. The rest of the recipe is really quick to throw together.)
- Cooking Time: 8 to 10 hours on low (With a beef roast, I do not recommend cooking on high. Cooking on low will give you the best results with a fork tender, juicy roast.)

Crock Pot Fiesta Roast Dinner
Ingredients
- 2.5 lb beef roast
- 20 oz tomatoes with chiles (2 – 10 oz cans)
- 1 oz pkg taco seasoning
- 16 oz bag baby carrots
- 5 medium Russet Potatoes peeled and sliced into long thin wedges
- 1 medium onion cut into fourths
Instructions
- Place your veggies in a 6-quart crock pot.
- Put your roast on top of the bed of veggies
- Add in your remaining ingredients.
- Cover and cook on low for 8-10 hours until your roast and veggies are fork tender.
