If you have poked around our site much at all, you may know that I have been dubbed both the Carb Queen and Sugar Princess. So, it may surprise you that I am making a low carb recipe but, this Low Carb Ninja Foodi Stuffed Pepper Soup is so good that Carb Queen even loves it! What You Will Need for Ninja Foodi Stuffed Pepper Soup (Low Carb)

Ingredients Needed

  • 1 lb ground beef
  • 2 tablespoons dried minced onion
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • 3 cups beef broth
  • 24 oz jar marinara sauce (You will want to find a sauce with the lowest carb, if you are counting carbs.)
  • 1 cup frozen riced cauliflower, kept frozen
  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

Equipment Needed

Time Needed

  • Prep Time: 15 minutes
  • Time to Come Up to Pressure: approximately 15 minutes
  • Cooking Time: 15 minutes on high pressure
  • Natural Release Time: 15 minutes

  • We’ve tested this recipe in a 6 quart Instant Pot and 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.

  • Cook 1 lb ground beef on saute setting with 1 tablespoon minced garlic and 2 tablespoons dried minced onion until browned through.
  • Drain and return to the pot.
  • Add salt and pepper , 3 cups beef broth, 24 oz marinara sauce, 1 cup riced cauliflower (kept frozen), 1 cup green bell pepper (chopped), 1 cup red bell pepper (chopped), 1/2 teaspoon oregano and 1/2 teaspoon basil.
  • Seal and cook under high pressure for 15 minutes and naturally release for at least 15 minutes before quick releasing.
