How to Make Parsley Potatoes in a Crock Pot

When I went to the store to find the potatoes for this Parsley Crock Pot Potatoes recipe, my local grocery store did not have 1 1/2 lbs of baby potatoes, but they did have 1 lb bags of petite gold potatoes. So, that is what I went with, and the result was absolutely delicious!

The initial prep for this recipe is so incredibly quick that it is almost comical. To get these tasty potatoes, you just have to wash them, put them in the crock pot, cover them with water and let the crock pot do its thing. I do love me a recipe I can put on in just a matter of minutes. ๐Ÿ˜‰ The seasonings that are added at the end are easy to prep too, so I have really fallen in love with this recipe.

What You Will Need for Parsley Crock Pot Potatoes

Ingredients Needed

  • 1 lb petite gold potatoes, washed
  • Water, enough to cover your potatoes
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 3 tablespoons fresh parsley, minced
  • 1 tablespoon fresh chives, minced
  • Salt and pepper to taste (I used kosher salt, but you can use table salt, if you don’t have kosher salt.)

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 5 to 6 hours on low or 2 hours 30 minutes to 3 hours on high, stirring halfway through the cooking time, if your slow cooker does not cook evenly

  • Clean 1 lbs gold petite potatoes and place in 4 Quart Crock Pot.
  • Cover with water.
  • Cook on high for 2 1/2 to 3 hours, until fork tender, and drain.
  • Mix 1/4 Cup Water, 1/4 Cup Butter, 1 Tbsp Lemon Juice, 3 Tbsp Fresh Parsley (minced) and1 Tbsp Fresh Chives (minced) and drizzle over potatoes.
  • Toss to coat and sprinkle with Salt and Pepper to taste.
