How to Make Pork Rice Bowl in a Crock Pot

There are just some days that I need an easy meal. Today was one of those days. So, I got to thinking about what I could do for a dump and go recipe, and this Pork Crock Pot Rice Bowl was born. It was inspired by a rice bowl I had at this incredible restaurant in Hanksville, Utah while we were traveling. (I highly recommend stopping by Outlaw’s Roost if you are in the area!) While this rice bowl is put together differently, I love that it reminds me of the delicious meal I had while I was on vacation.

So, this recipe is super quick to put together. All you have to do is cut your tenderloin in half to make it easier to put in the crock pot, dump the salsa and beans on top, and let the crock pot do the work. After the cooking time, you just shred your pork with two forks. We also love that you can prepare the bowls to each person’s personal preferences with the toppings. Easy, hearty and delicious. Sounds good to me!

  • 2 lb pork tenderloin
  • 16 oz jar salsa verde
  • 15.25 oz can black beans, undrained
  • White rice, prepared
  • Optional toppings: shredded Monterey Jack cheese, sour cream, chopped fresh cilantro

  • Cut your 2 lbs pork tenderloin in half and place in a 4 quart slow cooker.
  • Pour 16 oz Jar Salsa Verde and undrained 15.25 oz can black beans on top of the pork.
  • Cover and cook on low for 4 to 6 hours.
  • Shred the pork loin with two forks and stir until everything is well combined.
  • Serve the shredded pork and cooking juices over Cooked Rice and top with Shredded Monterey Jack cheese, sour cream, chopped fresh cilantro, if desired.
