How to Make Simple Roast in a Slow Cooker

So, as I have been revisiting some of our older recipes, I have to be honest, I may or may not be picking some of my favorite recipes. This Simple Slow Cooker Roast is one of them. I made some slight adjustments to the recipe that turned out nicely. This is just a delicious, comfort food recipe that really hits the spot.

People usually ask about what specific type of roast to use. The great thing about using a slow cooker to make a roast is that the long cooking time at the low heat setting can turn any roast into a fall apart, tender main dish. (I do not recommend ever cooking a beef roast on high in a slow cooker. A beef roast just does better on low.) When I am looking for a roast at the store for a slow cooker recipe, I usually look for whatever is on sale or whatever is the cheapest per pound.

What You Will Need for Simple Slow Cooker Roast

Ingredients Needed

  • 3 lb beef roast
  • 6 medium russet potatoes, peeled and cut into large cubes
  • 1 medium yellow onion, sliced
  • 16 oz bag baby carrots
  • 1 oz mushroom gravy packet
  • 2 teaspoons garlic salt
  • 2 teaspoons parsley flakes
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups beef broth
  • Water

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 7 to 8 hours on low (I do not recommend cooking a beef roast on high. By cooking this on low for a longer period of time, you will get the most tender results.)

Instructions

  • Layer your potatoes, onions and carrots in the bottom of your 6 quart or 7 quart slow cooker.
  • Sprinkle your garlic salt, garlic powder, pepper, salt and parsley flakes evenly over your veggies.ย 
  • Lay your roast on top over everything and sprinkle your gravy packet on top.
  • Being careful to not wash the gravy mix off of your roast, add your beef broth, followed by water around the roast until just the top of the roast is showing.
  • Cover and cook on low for 7-8 hours, until your roast and veggies are fork tender.
