How to Make Easy Italian Roast in a Crock Pot

We loved the Crock Pot Italian Style Pork Chop Dinner I made a while back. I had a roast in the freezer and thought I would give that super simple recipe a try with my roast (after I thawed it out since health experts recommend not slow cooking frozen meats). Now you have this delicious Easy Italian Crock Pot Roast recipe to enjoy! It is fork tender and delicious. You are going to love it!
If you are slow at peeling potatoes, as I am, then this recipe prep is going to take you a few minutes longer. If you are a whiz when it comes to potatoes, you can seriously have this recipe in the crock pot in 5 minutes flat. Peeling and cutting your potatoes into wedges is the hardest part. While Momma can peel a potato quickly with a knife, I use a vegetable peeler that I got at Tupperware party about 15 years ago that is very similar to this. I thought I would share that since I know I can’t be the only one who doesn’t have Momma’s amazing potato peeling skills.
What You Will Need For Easy Italian Crock Pot Roast
Ingredients Needed
- 3 lb beef roast (You can use whatever roast cut you can find since we are cooking it on low for 8-10 hours, even a tougher cut of meat will become wonderfully tender.)
- 4 medium Russet potatoes, peeled and cut into wedges
- 16 oz bag baby carrots
- 16 oz bottle Italian Dressing
- Salt to taste, if desired
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- 6 quart crock pot
Time Needed
- Prep Time: 5 to 10 minutes depending on how quickly you can peel potatoes and cut them into quarters
- Cooking Time: 8 to 10 hours on low (I do not recommend cooking a roast on high. If you cook it on high, it will not be as tender as it would be if you cooked on low.)

Easy Italian Crock Pot Roast
Ingredients
- 3 lb beef roast
- 4 medium Russet potatoes peeled and cut into wedges
- 16 oz bag baby carrots
- 16 oz bottle Italian dressing
- salt to taste
Instructions
- Place your roast in a 6 quart slow cooker.
- Put your potato wedges and carrots around your roast.
- Pour your Italian dressing over everything.
- If desired, salt to taste.
- Cover and cook on low for 8-10 hours.
