How to Make Meatloaf Parmesan in a Slow Cooker

If you are looking for a meatloaf that is picky eater approved and not the same ol’ same ol’, I highly recommend checking out this Slow Cooker Meatloaf Parmesan. It is not only delicious, it is easy to throw together as well. We absolutely loved the flavor of this recipe and devoured it. It is just one of those perfect comfort foods.
When making a meatloaf, I know that many people do not want to use a lean ground beef to avoid having a dry meatloaf. However, when you are cooking a meatloaf in a crock pot, all the moisture stays right in the meatloaf, and this meatloaf is most definitely not dry. It is moist and delicious!

What You Will Need for Slow Cooker Meatloaf Parmesan
Ingredients Needed
- 2 lbs lean ground beef
- 14 oz jar pizza sauce, divided
- 2 tablespoons dried minced onion
- 2 tablespoons minced garlic
- 1/4 cup diced bell peppers
- 1 1/2 teaspoons Italian seasoning or pizza seasoning
- 2 large eggs
- Salt and pepper to taste
- 3/4 cup Italian style bread crumbs
- 3/4 cup shredded parmesan people
- 1 1/2 cups shredded mozzarella
Equipment Needed
- Large bowl
- Measuring cups
- Measuring spoons
- Sharp knife
- Cutting board
- Meat chopper
- 3.5 Quart Casserole Crock Pot OR 6 Quart Slow Cooker
- Meat thermometer
- Spatula
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 2 hours to 2 hours and 30 minutes on high, rotating the insert halfway through the cooking time if your slow cooker does not cook evenly (It is done when the center of the meatloaf reaches at least 165 degrees Fahrenheit.)

Slow Cooker Meatloaf Parmesan
Ingredients
- 2 lbs Lean Ground Beef
- 14 oz Pizza Sauce , divided
- 2 Tablespoons Dried Minced Onion
- 2 teaspoons Garlic minced
- 1/4 cup Bell Peppers diced
- 1.5 teaspoon Pizza Seasoning (or Italian Seasoning)
- 2 Eggs
- 3/4 cup Italian style bread crumbs
- Salt and Pepper to Taste
- 3/4 Cup Shredded Parmesan
- 1.5 Cups Shredded Mozzarella
Instructions
- In a large bowl mix together 1 cup of 14 oz Pizza Sauce with 2 lbs Lean Ground Beef, 2 Tablespoons Dried Minced Onion, 2 teaspoons Garlic, 1/4 cup Bell Peppers (diced), 3/4 Cup Shredded Parmesan, 2 Eggs, 1.5 teaspoon Pizza Seasoning, Salt and Pepper to Taste and 3/4 cup Italian style bread crumbs. I like to use my VERY favorite meat chopper to mix up my meatloaf.
- Spray a 3.5 Quart Casserole Crock Pot or 6 Quart Slow Cooker with cooking spray and pat meat down into the insert, making sure the center is pressed down more than the outer edges.
- Cover and cook on high for 2-2.5 hours.
- If needed, use a spatula to push extra oil from top of meatloaf off to sides.
- Pour remaining pizza sauce on top of the meatloaf and top with 1.5 Cups Shredded Mozzarella.
- Cover with lid for a few minutes until cheese melts.
Notes
- Using lean ground beef for this recipe is important because the meat will shrink up and the fat will pool around the outside of your loaf. If you use a higher fat beef, your loaf will be a lot smaller and you will have a lot more excess oil around the outside.
- Once your meatloaf is done, lift slices out of oil and store leftovers in a sealed container in the fridge for up to 3 days.
