How to Make Stuffed Buffalo Meatloaf in a Crock Pot

If you love buffalo flavored dishes as much as we do, you are going to LOVE this Stuffed Crock Pot Buffalo Meatloaf. It is really simple to throw together and has a delightful surprise inside!

What is that delightful surprise, you ask? It is a delightful mixture of cream cheese and ranch dressing mix. So, you have the heat of buffalo hot sauce with the delicious complimenting, cooling flavor of ranch! It is divine!

What You Will Need

Ingredients Needed

  • 2 lbs lean ground beef (The leaner the beef you use, the less extra grease you will have in your crock pot.)
  • 2 eggs
  • 1/2 cup buffalo hot sauce, plus more for garnish if desired (We used Frank’s Hot Sauce. You can use whatever your favorite hot sauce may be.)
  • 2 cups oats or crushed crackers
  • 8 oz cream cheese, softened
  • 1 oz packet ranch dressing/dip mix

Equipment Needed

  • Large bowl
  • Measuring cups
  • Your hands (They are great for mixing all the meatloaf ingredients together and spreading out the meat mixture in your crock pot. Just be sure to wash them thoroughly once you are done.)
  • Medium bowl and hand mixer or stand mixer
  • Stirring spatula
  • 4 quart slow cooker

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high

Ingredients

Instructions

  • In a large bowl, mix together your ground beef, eggs, oats or crumbled crackers and hot sauce until well combined.
  • Divide the meat mixture in half and press half into the bottom of a lightly greased 4 quart slow cooker.
  • In a different bowl, mix together your cream cheese and ranch mix until completely combined.
  • Spoon dollops of the cream cheese mixture all across the top of the bottom layer of your meatloaf and spread gently.
  • Take the second half of the meat mixture and flatten in your hands, lay on top of the cream cheese mixture and press the meat mixture until it is spread out evenly.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours.
  • If desired, serve with a drizzling of hot sauce.
