How to Make Easy Chicken Fajitas on a Blackstone Griddle

If you need dinner but do not have a ton of time, I have you covered. These Easy Blackstone Chicken Fajitas are definitely going to be a new go-to recipe for when you are in hurry but want something delicious. It took me about 15 minutes to prep this recipe, but you may be able to do it more quickly if you are a fast prepper. As for me, I am pretty slow. Another way to make this recipe go faster is to slice your peppers, onion and chicken ahead of time. That will take the prep time from 15 minutes down to about 5 to 7 minutes.
This recipe isn’t just easy to make. It is so delicious. The flavors all come together to give you a delicious chicken fajita that is sure to please! Each person can top theirs with their favorite fajita toppings, and everyone will be enjoying a flavorful dinner.

What You Will Need for Easy Blackstone Chicken Fajitas
Ingredients Needed
- 2 lbs chicken tenders, cut into strips
- 1 oz taco seasoning packet
- 10 oz can diced tomatoes with chilies, lime and cilantro, undrained
- 3 cloves garlic, minced
- 3 bell pepper, cut into strips (I used 1 red, 1 yellow and 1 green, but you can use whatever colors you prefer.)
- 1 sweet onion, cut into strips
- 1 medium lime, juiced
- Taco size tortillas
- Your favorite fajita toppings
Equipment Needed
- Sharp knife
- Cutting board
- 2 medium mixing bowls
- Can opener
- Garlic press
- Juicer squeezer
- Small bowl or cup
- Extra long griddle spatulas
- Steaming/basting dome
- 2 squeeze squirt bottles (One for oil and one for water. If these look too pricey, don’t worry. You can find these for around a dollar a piece at Walmart, and they work great.)
- 22 inch Blackstone Griddle or larger (You will need enough room for your cube steak and potatoes.)
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 17 to 20 minutes over low heat

Easy Blackstone Chicken Fajitas
Ingredients
- 2 lbs Chicken Tenderloins cut into strips
- 1 oz envelope Taco Seasoning
- 10 oz Can Diced Tomatoes with Chilies, Lime and Cilantro
- 3 Cloves Garlic Minced (We use Freeze Dried)
- 3 Bell Peppers cut into strips
- 1 medium Sweet Onion cut into strips
- 1 medium Lime juiced
- small tortillas
- favorite fajita toppings
Instructions
- Slice 2 lbs Chicken Tenderloins into strips and place in a bowl, set aside.
- Slice 3 Bell Peppers and 1 medium Sweet Onion into strips and place in a separate bowl, set aside.
- Preheat your Blackstone on low.
- Juice 1 medium Lime into a cup or bowl, set aside.
- Mince 3 Cloves Garlic, set aside.
- Drizzle water on one half of your Blackstone, pour the sliced peppers and onions on the half with the water, cover with the steaming dome and cook for 5 minutes, before adding the chicken, and flipping with a spatula every 3 minutes (cover again after every flip).
- After the 5 minutes is up, drizzle oil on the other half of your Blackstone, place the cut up chicken on top of the oil, sprinkle with half 1 oz envelope Taco Seasoning (reserving the other half for a later step) and cook for 5 minutes, moving the chicken around and flipping it halfway through the cooking time.
- Take the steaming dome off of the Blackstone, combine the chicken and veggies together on the Blackstone.
- Sprinkle the remaining taco seasoning across everything.
- Add the minced garlic, lime juice and 10 oz Can Diced Tomatoes with Chilies, Lime and Cilantro (undrained) on top of the chicken and veggies and stir/toss everything together until well combined.
- Cook for an 6-10 minutes, until your veggies reach desired tenderness and chicken is cooked through, stirring/tossing/flipping everything once or twice.
- Serve on small tortillas with your favorite fajita toppings.
