For a while now, Cris’ Crock Pot Pepper Jack Chicken recipe has been a huge favorite not only at our houses, but in the homes of you, our dear readers. When a recipe becomes a favorite, readers generally ask us about other means of cooking a recipe. So not only do we have a crock pot recipe for this recipe, we also have the Instant Pot Pepper Jack Chicken recipe and the Air Fryer Pepper Jack Chicken (Ninja Foodi) recipe. And now, da da da dum….we have the oven recipe too!

I am sure some of your are thinking, “Why the foil?” So, I’ll answer that right away. I wanted the peppers and mushrooms on top so the flavors could seep down into the chicken, but needed a way to keep some of the moisture in (like you have in a crock pot), so I added the foil to the top for the main part of the cooking. It worked well! I did put the green beans on bottom since they need a bit more cooking than the mushrooms and peppers. If you like your mushrooms and peppers softer and want to give putting them on bottom a try, let me know how it turns out!

  • 3.5 lbs boneless, skinless chicken thighs or breasts
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoon cumin
  • salt and pepper to taste
  • 10 oz frozen whole green beans
  • 1 bell pepper seeded and sliced
  • 8 oz fresh mushrooms sliced
  • 1/4 Cup Butter sliced
  • 10 Slices Pepper Jack Cheese

Equipment Needed

  • 9 x 13 baking dish
  • Cutting board
  • Sharp knife
  • Butter knife
  • Measuring spoon
  • Aluminum foil

Time Needed

  • Prep Time: 10 minutes (or less)
  • Cooking Time: 50-60 minutes

  • Preheat your oven to 400.
  • Place green beans and top with chicken in the bottom of a 9 x 13 baking dish and season with garlic powder, onion powder, cumin and salt and pepper.
  • Layer mushrooms and peppers.ย 
  • Season again with salt and pepper, top with butter and cover with aluminum foil.
  • Bake for 50-60 minutes until chicken reaches safe internal temperature.
  • Shred your chicken with 2 forks and top with cheese and return to your oven (without your aluminum foil) until the cheese melts (about 3 minutes).
  • Serve with a slotted spoon.
