How to Make Cheesy Breakfast Casserole in a Crock Pot

This Crock Pot Cheesy Breakfast Casserole recipe is pretty easy to throw together. The “hardest” part of this recipe is not really hard. It just takes a bit of time, and that is frying up the bacon. However, if you want to throw this together quickly one morning, you can fry up your bacon the night before and dice your onion. That would make this a dump, stir and go recipe!

While I was putting this recipe together, Ryder said I should call this recipe the Your Saturday Morning Breakfast. You see, special breakfasts on Saturday mornings are a tradition around our hose. And this recipe had tons of his favorite ingredients in it, so he thought it was pretty special. However, once Ryder tried this, he deemed it “The best recipe you have ever made Mom!”

A little side note, my store only had a 26 oz bag of frozen shredded hash browns, so I have not tried this with a 32 oz bag, but think it should work if you want to give it a try.

  • 26 oz bag of frozen shredded hash browns
  • 10.5 oz can of cheddar cheese soup
  • 1 lb of bacon, cooked crisp and crumbled, divided
  • 1.5 cups of shredded cheddar cheese, divided
  • salt and pepper to taste

Equipment Needed

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 2 hours on high, turning the insert halfway through the cooking time if your slow cooker does not cook evenly

  • Mix together your frozen hashbrowns, soup, half of your bacon, half a cup of shredded cheese and salt and pepper to taste in a casserole crock pot or 6 quart crock pot and spread evenly across crock pot
  • Sprinkle your remaining cheese evenly across the top followed by your remaining bacon
  • Cover and cook on high for 2 hours, turning your insert halfway through the cooking time if your slow cooker does not cook evenly

  1. We had a pancake breakfast for clients at my office and these disappeared quickly! They loved it and I’ve passed out the recipe to quite a few already. BIG HIT. I was asked to make a triple batch next time. Super easy to make.

    I’m trying this recipe tonight but have one question . In the general directions at the top of the page under time needed it says 2 hours on low. In the directions on the recipe card thing it says 2 hours on high. Can anyone that has made this tell me which one it is? Thanks.

      I’m so sorry about that Linda! It was a typo in the post. I have fixed it. You will want to cook it for around 2 hours on high. As always, be sure to watch it closely the first time you make it to adjust the timing as needed for your specific slow cooker. Enjoy!
