How to Make Spicy Creamy Jalapeno Chicken Soup in a Crock Pot

To be perfectly honest, I did not set out to make a soup for those that love spicy foods. It was supposed to have a bit of a kick at the end, but not intense heat. However, the final product was this delicious, but extremely hot Spicy Creamy Crock Pot Jalapeno Chicken Soup.
If you have read many of my posts before, you probably already know that I am a complete wimp when it comes to spicy foods. However, my husband and my daughter are all about the heat. I tasted this and was positive I had actual flames coming from my mouth. So, I had to rely on my dear Michael and Iyla to give me feedback on the true flavor of this soup. (I was too busy guzzling milk trying to put out the fire in my mouth.) They loved the flavor and the heat. So, if you enjoy very spicy flavorful soups, this recipe is for you!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cubed
- 3 tablespoons olive oil
- Small onion, diced
- 3 cloves garlic, minced
- 1/2 a 12 oz jar of sliced jalapenos, chopped and with none of the juices in the jar
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- salt and pepper to taste
- 1 cup salsa
- 3 cups chicken broth
- 8 oz cream cheese, very soft and cubed (We heated in microwave for 30 sec, removed from foil wrapping and placed on microwave safe plate.)
- 3 cups shredded cheddar cheese, plus more for garnish
Equipment Needed
- Sharp knife
- Cutting board
- Garlic press
- Measuring spoons
- Measuring cups
- Heat safe plate
- Medium skillet (If you have a slow cooker with the sauté feature, you can use the sauté feature instead instead of a skillet.)
- Wooden spoon or spatula
- 6 quart slow cooker
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high

Spicy Creamy Crock Pot Jalapeno Chicken Soup
Ingredients
- 2 lbs boneless skinless chicken cubed
- 3 tablespoons extra virgin olive oil
- 1 small onion diced
- 3 cloves garlic minced
- 6 oz jar sliced jalapenos (half of a 12 oz jar) chopped with no juices
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- salt and pepper to taste
- 1 cup salsa
- 3 cups chicken broth
- 8 oz cream cheese very soft and cubed (We heated in microwave for 30 sec, removed from foil wrapping and placed on microwave safe plate.)
- 3 cups Shredded Cheddar Cheese plus more for garnish
Instructions
- In a large skillet (or 6 quart slow cooker with a sauté feature), heat oil and add garlic, onion, peppers and seasonings.
- Sauté until the onions are soft, approximately 5 minutes.
- If you used a skillet, transfer everything to a 6 quart slow cooker.
- Add cubed chicken, salsa, softened cream cheese cubes and broth and stir well.
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours, stirring halfway through using a wooden spoon to smoosh the cream cheese so it will blend well with the rest of the ingredients.
- Once chicken is done, turn on high, if not already on high and stir in cheddar cheese until cheese is melted.
- Serve with shredded cheese on top, if desired.

Hi! I just discovered your website as I was searching for a creamy jalapeño and chicken soup recipe and I’m now anxious to search your recipes! I do have a quick question regarding your Crock Pot Jalapeño Chicken Soup…is it a thick mixture of which I like creamy soups to be on the thicker side. If by chance it is not, what do you recommend adding to recipe to make it thick?

It isn’t super thick. I haven’t tried making it thicker, but have a few ideas. If you want to try adding more softened cream cheese, that should help thicken it up some. If it is still not thicken enough for your liking at the end, you can add in additional shredded cheese. The third option would be to make a cornstarch slurry (2 parts cold water to 1 part cornstarch) and add it at the beginning. If you do the cornstarch method, I would recommend cooking on high instead of low. If you give any of these ideas a try, let me know how it goes!
