This 3 Cheese Crock Pot Chicken for Two recipe is adapted from one of Momma’s recipe. We loved this recipe when I first made it, so I thought I should give it a try for people who need fewer servings. It was just as big of a hit as the first time I made it.
This recipe is great served on its own. You have your main dish and a side all made together. However, if you want, you can serve it the way my husband loves it. Michael loves to eat this recipe over a bed of rice. Whichever way you choose to have this, I hope you love it as much as we do!

What You Will Need for 3 Cheese Crock Pot Chicken for Two
Ingredients Needed
- 1/2 lb boneless skinless chicken thighs, trimmed (or chicken breasts cut into thigh size pieces)
- 1/4 teaspoon salt
- 1/2 teaspoon dried minced onion
- 1/4 teaspoon garlic powder
- 1 1/4 tablespoons butter, sliced
- 1/2 cup golden mushroom soup
- 3/4 cup frozen green beans
- 2 slices American cheese
- 2 slices pepper Jack cheese
- 2 slices mozzarella cheese
Equipment Needed
- Sharp knife
- Cutting board
- Measuring spoons
- Measuring cups
- 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 hours and 30 minutes to 3 hours and 30 minutes on low or 1 hour and 15 minutes to 1 hour and 30 minutes on high, rotating your insert halfway through cooking if your slow cooker does not cook evenly

Ingredients
- 1/2 lb boneless, skinless chicken
- 1/4 teaspoon salt
- 1 /2 teaspoon Dried Minced Onion
- 1/4 teaspoon garlic powder
- 1 1/4 tablespoons butter sliced
- 1/2 cup Golden Mushroom Soup
- 1/2 cup frozen green beans
- 2 slices American cheese
- 2 slices Pepper Jack Cheese
- 2 slices mozzarella cheese
Instructions
- Place your chicken in the bottom of a 2.5 quart, 2.5 quart small casserole, 3 quart or 4 quart crock pot.
- Sprinkle with seasonings.
- Spoon soup over everything.
- Spread frozen green beans on top.
- Evenly place slices of butter on top of the green beans.
- Cover and cook on low for 2 hours and 30 minutes to 3 hours and 30 minutes or high for 1 hour and 15 minutes to 1 hour and 45 minutes, rotating your insert halfway through cooking if your slow cooker does not cook evenly.
- With about 10 minutes remaining, tear your cheese slices up and put the pieces on top of everything (try to keep the cheese from touching the insert) and cook for 10 minutes until cheese are melted.
- You can serve this layered, with the chicken topped by green beans and cheese OR you can place the chicken on a servings plate, stir the sauce until well combined and spoon sauce and green beans over top.
