How to Make 3 Cheese Chicken in a Crock Pot

Dear Readers, you are in for a treat! I just love it when Momma sends me a message that she has come up with a new recipe. I have yet to get a message like that from her, try the recipe and think, “Nope.” She hits it out of the park every time! Just like she did with this 3 Cheese Crock Pot Chicken! Yum!

When Momma made this, she used boneless, skinless chicken thighs. As much as we love dark meat around here, we also love a good deal. So, since we found a good deal on boneless, skinless chicken breasts, we used them. You can use whichever you prefer. Just keep in mind the larger pieces of meat will be on the longer cooking time side and the smaller pieces will be on the shorter side. As always, watch it closely the first time you make it to know how your unit cooks this recipe.

If you can’t find Golden Mushroom Soup, that is okay. Momma actually used Beefy Mushroom soup. She used what she had in her pantry, and I used what I had in mine. I was lucky enough to taste both recipes, and both gave the recipe a great flavor!

  • 2 lbs boneless, skinless chicken
  • 1 teaspoon salt
  • 1 teaspoon minced onion
  • 12 oz bag frozen green beans (kept frozen)
  • 1 teaspoon garlic powder
  • 5 slices American cheese
  • 10.5 oz can golden mushroom soup
  • 5 slices mozzarella cheese
  • 1/4 cup butter, sliced
  • 5 slices pepper jack cheese

  • Prep Time: 5 minutes
  • Cooking Time: 6 to 7 hours on low or 3 to 3.5 hours on high

Ingredients

  • 2 lbs boneless, skinless chicken
  • 1 teaspoon salt
  • 1 teaspoon Dried Minced Onion
  • 1 teaspoon garlic powder
  • 1/4 cup butter sliced
  • 10.5 oz can golden mushroom soup
  • 12 oz frozen green beans
  • 5 slices American cheese
  • 5 slices Pepper Jack Cheese
  • 5 slices mozzarella cheese

Instructions

  • Place your chicken in the bottom of a 4 quart slow cooker.
  • Sprinkle with seasonings.
  • Spoon soup over everything.
  • Spread frozen green beans on top.
  • Evenly place slices of butter on top of the green beans.
  • Cover and cook on low for 6-7 hours or high for 3-3.5 hours.
  • With about 5 minutes remaining, layer your cheeses in this order: Pepper Jack, American, Mozzarella, recover and cook for 5 minutes until cheese are melted.
  • You can serve this layered, with the chicken topped by green beans and cheese OR you can place the on a servings plate, stir the sauce until well combined and spoon sauce and green beans over top.

  2. I made this with chicken breasts and it was delicious! I am now going to make it with thighs like your mom did. How long should I cook the thighs for?

      I’m so glad you liked this! I haven’t made this with boneless, skinless chicken thighs, but I would guess that the cooking time would be 4-6 hours on low or 2-3 hours on high. As always, watch it closely the first time you make it to know how long it takes in your particular slow cooker. Enjoy!
