How to Make Loaded Chicken in a Crock Pot

So, like I said, this Crock Pot Loaded Chicken is based off a previous recipe, thanks to a wonderful suggestion by reader Vicki. You might be thinking, “Hey! That does NOT look like Swiss cheese!” Well, that is because it is not Swiss Cheese. You see, I picked up my grocery order and lo and behold, they did not include the Swiss Cheese. I was already ready to put this recipe on! I had EVERYTHING else ready! Eeek! What to do? I looked in the fridge, and we had some shredded cheddar, so tada! We used cheddar. You may be thinking, “Why tell me this?” The reason to tell you this is so you can be confident to try out adjustments to any recipe you are making. It may change up the recipe flavor or texture a bit, but if it is a substitution that you think you will like, it may turn out to be a winner…just like this recipe!

What You Will Need
Ingredients Needed
- 3 slices of bacon crisply cooked, crumbled and drippings reserved
- 3.5 lbs boneless, skinless chicken (I used thighs)
- 4 oz can sliced mushrooms drained
- 10.75 oz can cream of chicken soup
- 6 slices of swiss cheese
- 1 oz ranch dressing packet
- 1/2 cup onion, diced
Equipment Needed
- Skillet
- Tongs
- Sharp knife
- Cutting board
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 5 hours on low heat

Crock Pot Loaded Chicken
Ingredients
- 3 slices of bacon crisply cooked, crumbled and drippings reserved
- 6 boneless skinless chicken breasts
- 4 oz can sliced mushrooms drained
- 10.75 oz can cream of chicken soup
- 1 cup shredded cheese of your choice
- 1 oz envelope Ranch dressing mix.
- 1/2 cup onion diced
Instructions
- Pour your reserved bacon grease in a skillet and heat up over medium heat
- Place your chicken breasts in the warmed grease and cook for 3-5 minutes until slightly golden (turning once)
- Spray your crock pot with cooking spray
- Put your chicken in your crock pot
- Sprinkle your chicken with your ranch dressing packet
- Cover with your mushrooms and onions
- Pour your soup in your skillet, warm through, then pour over your chicken
- Cover and cook on low for 4-5 hours, check with a meat thermometer to know when the chicken is done
- Sprinkle your cheese evenly across and top with bacon, turn heat up to high and cover and cook for 10-15 minutes more until the cheese is melted

Campbell’s has low-sodium soups you can substitute. In fact I use them whenever possible for the same reason for both my husband’s heart condition and my overall health issues.
Do you have recipes that do not use creamed soup? We are low-salt seniors!
