When I first came up with this delicious soup recipe, it was per the request of one of our readers. I am always happy to spot light this 7 Can Crock Pot Beefy Vegetable Soup. It is so simple to throw together, tastes amazing and is really hearty.
This recipe can be wonderfully budget friendly. You can do this by substituting ground turkey for the ground to beef. (It is a 1-1 substitution.) Another thing you can do is use generic vegetable juice, beef broth, veggies and seasonings. If you do that, this recipe is super cost effective for the amount of soup you have.

What You Will Need for 7 Can Crock Pot Beefy Vegetable Soup
Ingredients Needed
- 2 lbs ground beef, browned and drained
- 64 oz vegetable juice
- 14.5 oz can beef broth
- 15.25 oz can corn, drained
- 14.5 oz can green beans, drained
- 15 oz can peas, drained
- 14.5 oz can carrots, drained
- 15 oz can sliced potatoes, drained
- 14.5 oz can diced tomatoes, drained
- 1 small onion, chopped
- 1 tablespoon dried basil
- 1 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Equipment Needed
- Skillet and strainer or micro cooker
- Meat chopper
- Safety can opener
- Sharp knife
- Cutting board
- Measuring spoons
- Wooden spoon or stirring spatula
- 6-quart slow cooker
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through the cooking time, if possible

Ingredients
- 2 lbs ground beef browned and drained (or ground turkey)
- 64 oz vegetable juice
- 14.5 oz can beef broth
- 15.25 oz can sweet corn drained
- 14.5 oz can green beans drained
- 15 oz can peas drained
- 14.5 oz can sliced carrots drained
- 15 oz can sliced potatoes drained
- 14.5 oz can diced tomatoes drained
- 1 small white onion diced
- 1 tablespoon dried basil
- 1 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Instructions
- Put 2 lbs ground beef (or ground turkey – browned and drained), 15.25 oz can sweet corn (drained), 14.5 oz can green beans (drained), 15 oz can peas (drained), 14.5 oz can sliced carrots (drained), 15 oz can sliced potatoes (drained), 14.5 oz can diced tomatoes (drained), 1 small white onion (diced), 1 tablespoon dried basil, 1 1/2 teaspoon garlic salt, 1/2 teaspoon ground black pepper, 64 oz vegetable juice and 14.5 oz can beef broth in a 6-quart crock pot and stir until well combined
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring halfway through the cooking time, if possible.
