When I was thinking about converting the original recipe to this Bacon Crock Pot Creamy Corn for Two, I wanted to make it simple and foolproof. To do that, I used the double broiler method and used real bacon bits instead of frying up two pieces of bacon. It takes the prep time for this recipe down quite a bit. However, I find that real bacon bits are pretty salty, even for bacon. So, in this version of the recipe, I omitted any extra salt. Another change I made was to use whipped cream cheese instead of block cream cheese. Again, this is just a way to make this recipe more foolproof! I hope you love this recipe as much as my family does!

What You Will Need for Bacon Crock Pot Creamy Corn for Two

Ingredients Needed

  • 1 cup frozen corn, kept frozen
  • 1/3 cup whipped cream cheese
  • 4 1/2 teaspoons butter, sliced
  • 1 tablespoon sugar
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons real bacon bits (or 2 slices bacon, cooked crisp and crumbled)

  • Prep Time: 5 minutes
  • Cooking Time: 1 hour and 30 minutes to 2 hours on low or 45 minutes to 1 hour on high, stirring halfway through the cooking time to help all the ingredients combine together while cooking

    Ingredients

    • Put 1 cup frozen corn (kept frozen), 1/3 cup whipped cream, 4 1/2 teaspoons butter (sliced), 1 tablespoon sugar, 1/4 teaspoon pepper and 2 tablespoons real bacon bits in a small, heat safe mixing bowl that will hold all your ingredients and sit in a 4-quart crock pot with the lid on and stir.
    • Pour about an inch of hot water into the insert of a 4-quart slow cooker and place the bowl with the ingredients in the water. (If the water comes more than halfway up the side of the bowl, remove some water.)
    • Cover and cook on low for 1.5 to 2 hours or high for 45 minutes to 1 hour, stirring halfway through the cooking time.
