Meal Planning on a Budget

Aunt Lou here.

This time of year is hectic. However, as I have lived my life, I have realized that there is rarely a “time of year” that isn’t crazy and chaotic. It seems life is always running at 100 miles per hour. Be it the holiday celebrations at the end of the year, a sports season ramping up for yourself or the kids in your life, back to school or even the hubbub of summer (and I LOVE summer), life is speeding by. I don’t know about you, but, by golly, sometimes, I just want some comfort food in the middle of it all. Something that is filling and comforting to ground me in the middle of the chaos. That is why I am going with these yummy, easy to make, comfort food recipes for this week’s Budget Meal Plan: Week 12. Just because something is comfort food doesn’t mean it has to cost an arm and leg. I hope you enjoy these wonderful recipes and they bring you comfort in the chaos of life.

For Budget Meal Plan: Week 12, we are going to whip up some comfort food recipes that are easy on your budget.

Budget Meal Plan: Week 12

Monday: Crock Pot BBQ Chicken Chowdown (If you want to save some more money and time, you can use Real Bacon Pieces instead of the 10 slices of bacon in this recipe.)

Tuesday: Leftover Crock Pot BBQ Chicken Chowdown with optional side of Crock Pot Bacon Baked Beans (This is another recipe that you can use some Real Bacon Pieces, instead of buying bacon and frying it, to save time and money. Then you can either omit the bacon grease or use some you have saved in your fridge.)

Wednesday: 6 Can Crock Pot Taco Soup (This one is so quick to make, wonderfully delicious and so affordable since it only has 6 cans and one package of taco seasoning.)

Thursday: Leftover 6 Can Crock Pot Taco Soup with optional side of Creamy Mexican Style Crock Pot Cheesy Rice

Friday: Crock Pot Salsa Rice Sausage Casserole (You can also make this recipe on the stove top. It is a family favorite around here.)
