How to Make Salsa Rice Sausage Casserole in a Crock Pot

This Crock Pot Salsa Rice Sausage Casserole recipe is the crock pot version of a family favorite recipe that is made on a stove top. (You can find the stove top version of this recipe here.) I love having different ways to make recipes. This cooks up quickly since everything is cooked and you are just giving all the flavors time to meld together and the cheese to melt in the crock pot (kind of like when you throw a casserole in the oven for a short cooking time). I know my 4 quart slow cooker cooks hot, so I was watching it closely. Right around the 45 minute mark, all my cheese was melted. If I would have left it for another 15 minutes, the cheese would have burned at the edges. So, be sure and watch it closely the first time you make it.
There are very few ingredients in this recipe and not too make steps. That makes this recipe great for beginners to try out. I normally wouldn’t say that about a crock pot recipe that has rice in it, but this recipe uses cooked minute rice, not a lot of liquid and doesn’t cook long. So, that makes it just about as safe as you can get with rice in the crock pot. Regardless of whether you are a newbie to cooking or have been cooking for years and years, I hope you enjoy this delicious dish as much as I do!
What You Will Need for Crock Pot Salsa Rice Sausage Casserole
Ingredients Needed
- 14 oz smoked sausage, cut into approximately 1 inch slices (it doesn’t have to be exact)
- 2 cups minute rice
- 2 cups chicken broth
- 1 cup salsa (you can choose mild, medium or hot according to your preference of spiciness)
- 2 cups shredded cheddar cheese
- Cooking Spray
Equipment Needed
- Sharp knife
- Cutting board
- Large skillet
- Spatula
- Large microwave safe bowl
- Measuring cups
- Spoon
- 4 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 hour and 30 minutes to 2 hours on low or 45 minutes to 1 hour on high, until you cheese has melted, turning your insert halfway through cooking if your slow cooker does not cook evenly

Ingredients
- 14 oz package Smoked Sausage cut into approximately 1 inch slices (it doesn’t have to be exact)
- 2 cups minute rice
- 2 cups chicken broth
- 1 cup salsa (you can choose mild, medium or hot according to your preference of spiciness)
- 2 cups Shredded Cheddar Cheese
- cooking spray
Instructions
- Over medium heat, brown your sausage slices in a large skillet until they reach desired color.
- While your sausages are browning, prepare your minute rice per the instructions on the box using broth instead of water in a large microwave safe bowl.
- Add your salsa and browned sausage slices to your rice and stir until well combined.
- Pour your mixture into a lightly greased 4 quart crock pot.
- Top with your shredded cheddar cheese.
- Cover and cook on low for 1.5-2 hours or high for 45 minutes to 1 hour, turning your insert halfway through cooking if your slow cooker does not cook evenly. It is done when your cheese is melted.
