Cheesy Crock Pot Rotini for Two

I have taken one of my favorite side dish recipes and converted into this Cheesy Crock Pot Rotini for Two recipe. It is absolutely delicious!

How to Make Cheesy Rotini for Two in a Crock Pot

Since we use the double broiler method when making this Cheesy Crock Pot Rotini for Two, you can use anything from a 2.5 Quart Slow Cooker to 6 Quart Slow Cooker. You will just want to make sure the heat safe bowl you are using in the insert will allow the lid to close and can hold all your ingredients while being stirred. If you are using a 6 Quart Crock Pot, I would recommend using a bowl that best fits the ingredients and not the largest bowl you can fit in your slow cooker.
While I love how this recipe can be made in a variety of different slow cookers, what I really love about this dish is how creamy and flavorful it is. It really is one of those perfect comfort foods that are great to enjoy after a long day.

What You Will Need for Cheesy Crock Pot Rotini for Two
Ingredients Needed
- 1/2 cup half and half
- 1/3 cup canned cheddar cheese soup
- 2 tablespoons butter
- 4 oz Velveeta, cubed (The packaging of Velveeta has markings on it every 4 oz, so it is easy to get the right amount.)
- 1 cup rotini, al dente
Equipment Needed
- Measuring cups
- Safety can opener
- Butter knife
- Cutting board
- Small to medium saucepan
- Strainer (I love my on pot strainer. It fits everything from my large skillet to my small saucepans.)
- Wooden spoon
- Small heat safe bowl that fits inside the insert of your slow cooker with the lid on
- 2.5 Quart Crock Pot, 3 Quart Crock Pot, 4 Quart Crock Pot or 6 Quart Crock Pot
- Hot water (enough water that it comes halfway up the side of the bowl but no higher so the water does not get into the bowl)
- Heat safe gloves or oven mitts
- Stirring spatula
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 1 hour and 30 minutes to 2 hours on low or 45 minutes to 1 hour on high, stirring halfway through the cooking time

Cheesy Crock Pot Rotini for Two
Ingredients
- 1/2 cup half-and-half
- 1/3 cup canned Cheddar cheese soup
- 2 tablespoons butter
- 4 oz Velveeta
- 1 cup rotini pasta cooked al dente and drained
- Italian bread crumbs garnish
Instructions
- Put 1/2 cup half-and-half, 1/3 cup canned Cheddar cheese soup and 2 tablespoons butter (melted) in a small heat safe mixing bowl that will fit in the insert of a 2.5 Quart, 3 Quart, 4 Quart or 6 Quart Slow Cooker and stir until well combined.
- Add 4 oz Velveeta (cubed) and 1 cup rotini pasta (cooked al dente and drained) and stir until well combined.
- Put about 1 inch of hot water in the slow cooker's insert and place the bowl in the water. (If the water comes up past halfway up the side of the bowl, remove some of the water.)
- Cover and cook 1 hour and 30 minutes to 2 hours on low or 45 minutes to 1 hour on high, stirring halfway through the cooking time. Stir again at the end of the cooking time.
- If desired, sprinkle Italian bread crumbs on top of each serving.
