Many slow cooker recipes have pretty large amounts of servings. While that works great for when you need to take something to a potluck or are having people over, there are also times when you do not want to have a plethora of one dish. So, I thought I would make these Cheesy Crock Pot Scalloped Potatoes, that my family loves, with fewer servings to make this amazing side dish a little more versatile. What You Will Need for Cheesy Crock Pot Scalloped Potatoes
Ingredients Needed
- 4 cups russet potatoes, washed and sliced thinly
- 1/4 cup onion, finely chopped
- 2 1/2 tablespoons butter, cut into thin pats
- 4 teaspoons all-purpose flour
- 1/4 teaspoon ground dry mustard
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon ground black pepper
- 2 cups milk
- 1 1/3 cups shredded cheddar cheese (I used mild.)
- 1 tablespoon butter, melted
- 1/3 cup traditional bread crumbs
Equipment Needed
- Medium saucepan
- Stirring spatula
- Measuring spoons
- Measuring cups
- Sharp knife
- Cutting board
- Mandoline slicer
- Knife safe gloves
- 2.5 Quart Small Casserole Crock Pot, 2.5 Quart Crock Pot, 3 Quart Crock Pot OR 4 Quart Crock Pot
Time Needed
- Prep Time: 20 to 25 minutes
- Cooking Time: 5 to 7 hours on low or 2 hours and 30 minutes to 3 hours and 30 minutes on high, stirring your potatoes halfway through the cooking time to help them all cook evenly
- Additional Cooking Time: 30 minutes on high with the lid off

Cheesy Crock Pot Scalloped Potatoes
Ingredients
- 4 cups Russet Potatoes washed and thinly sliced
- 1/4 cup onion finely chopped
- 2 1/2 tablespoons butter sliced into thin pats
- 4 teaspoons all-purpose flour
- 1/4 teaspoon dry mustard
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 2 cups milk
- 1 1/3 cups shredded Cheddar cheese
- 1 tablespoon butter melted
- 1/3 cup traditional bread crumbs
Instructions
- Put 2 1/2 tablespoons butter in a saucepan and melt over medium-low heat.
- Add 4 teaspoons all-purpose flour, 1/4 teaspoon dry mustard, 1/2 teaspoon Worcestershire sauce and 1/8 teaspoon pepper and stir well.
- Slowly stir in 2 cups milkand cook on medium until it comes to a boil, stirring frequently so the milk on the bottom does not scald.
- While your milk is heating, wash and slice 4 cups Russet Potatoes and dice 1/4 cup onion (don't forget to stir your milk mixture) and combine the potato slices and diced onion in a lightly greased 2.5 Small Casserole Crock Pot, 2.5 Quart Crock Pot, 3 Quart Crock Pot OR 4 Quart Crock Pot.
- Once the milk mixture reaches a boil, reduce your heat back to medium-low.
- Cook your milk mixture, while stirring it frequently, until it thickens a little and is bubbly. (It took mine about 5-7 minutes.)
- Add 1 1/3 cups shredded Cheddar cheese to the milk mixture and stir until the cheese is melted.
- Pour your cheese mixture over your potatoes and give them a good stir.
- Cover and cook on low for 5-6 hours or on high for 2 1/2- 3 hours, stirring halfway through the cooking time. (It is done when your potatoes are tender.)
- In a small microwave safe bowl, melt your remaining 1 tablespoon butter and combine with 1/3 cup traditional bread crumbs and sprinkle evenly over your potatoes.
- Cook on high, uncovered for an additional 30 minutes.
