I am pretty sure that life never slows down, so that is why I love a good, easy recipe, and this Chicken Crock Pot Rice Bowl is just that. You just dump in the ingredients, let the crock pot do the work, make the rice, shred the chicken and enjoy! My 13-year-old loves to cook, and this recipe is so easy that I felt confident giving him the instructions and letting him put it on with me just standing by. He did a great job! So, even if you are new to cooking, you can do this too!

What You Will Need for Chicken Crock Pot Rice Bowl

Ingredients Needed

  • 2 lbs boneless, skinless chicken thighs (If you prefer white meat, you can use boneless, skinless chicken breasts that are cut into thigh size pieces.)
  • 16 oz jar salsa verde
  • 15.25 oz can black beans, undrained
  • Cooked white rice, for serving
  • Optional toppings: shredded Monterey Jack cheese, sour cream, chopped fresh cilantro

Ingredients

  • 2 lbs boneless skinless chicken thighs (If you prefer white meat, you can use boneless, skinless chicken breasts that are cut into thigh size pieces.)
  • 16 oz Jar Salsa Verde
  • 15.25 oz can black beans undrained
  • Cooked Rice
  • Shredded Monterey Jack cheese, sour cream, chopped fresh cilantro optional toppings

Instructions

  • Place 2 lbs boneless skinless chicken thighs in a 4 quart slow cooker.
  • Pour 16 oz Jar Salsa Verde and undrained 15.25 oz can black beans on top of the chicken
  • Cover and cook on low for 4 to 6 hours.
  • Shred the chicken with two forks and stir until everything is well combined.
  • Serve the shredded chicken and cooking juices over Cooked Rice and top with Shredded Monterey Jack cheese, sour cream, chopped fresh cilantro, if desired.
