How to Make Chicken Chile Verde Soup in a Crock Pot

We recently had a reader ask about making Cris’ Crock Pot Chile Verde Soup with chicken instead of pork. When I was talking to Cris about it, she said that we definitely should give it a try ourselves. When I saw how easy the recipe was to make, I was all for giving it a go! I am so glad I did. My family and I all loved this soup! The cilantro is optional, but if you are a fan of cilantro, don’t skip it. It really adds a pop of flavor to this soup! It is so yummy!
When Cris made the original version of this recipe, she drained and rinsed the beans. I really like the juices that are in the beans and the flavor they add, so I did not drain my beans. However, given how much Cris loves the original recipe, I would say that you are safe to add the beans drained and rinsed or undrained, whatever you prefer.
What You Will Need for Crock Pot Chicken Chile Verde Soup
Ingredients Needed
โข 1.5 lbs boneless, skinless chicken cut into cubes
โข 2 tablespoons oil
โข 2 cups chicken broth
โข 30 oz cannellini or Great Northern beans (2-15 oz cans) undrained
โข 8 oz diced green chiles (2-4 oz cans)
โข 1/4 tsp ground cumin
โข 1/4 tsp dried oregano
โข salt and pepper to taste
โข Optional: chopped fresh cilantro sour cream
Equipment Needed
- Sharp knife
- Cutting board
- Large skillet
- Measuring spoons
- Tongs
- Measuring cup
- Can opener
- Wooden spoon or stirring spatula
- 4 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 4 hours on high, stirring halfway through cooking if your slow cooker does not cook evenly

Crock Pot Chicken Chile Verde Soup
Ingredients
- 1.5 lbs boneless, skinless chicken cut into cubes
- 2 tablespoons oil
- 2 cups chicken broth
- 30 oz cannellini or Great Northern beans (2-15 oz cans) undrained
- 8 oz diced green chiles (2-4 oz cans) undrained
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- salt and pepper to taste
- Optional: chopped fresh cilantro sour cream
Instructions
- Pour your oil in a large skillet over medium heat.
- Cook your cubed chicken in the skillet on each side for 1-2 minutes until it is lightly browned.
- Put your cooked chicken in a 4 quart slow cooker.
- Add the rest of your ingredients (except cilantro and sour cream) to your crock pot and stir.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring halfway through cooking if your slow cooker does not cook evenly.
- Serve with sour cream and a sprinkling of cilantro.
