Meal planning is great in itself. So great that we have almost 100 meal plans available for you to choose from. (You can find them here.) However, if you have perused our site, you will know that I also love a good bargain and saving money in general. So, when Cris came to me with the idea of making a series of Budget Meal Plans, I was all for it, and now you have Week 1 available to you!
For this week, we are going to focus on cooking once and using twice. So you will have a longer cooking recipe on one day. Then you will use the leftovers from that recipe to make a different, shorter cooking recipe. A meal plan like this will help you get more mileage out of the meat you cook without having to eat leftovers the next day. You can also make different sides for two different nights, and then you can use the leftovers from those days on a third day. Win, win!
Budget Meal Plan: Week 1
Monday: Slow Cooker Rotisserie Chicken with Bacon Crock Pot Green Beans and Potatoes (or you can make them on your stove top: Bacon Green Beans and Potatoes (Stove Top Recipe))
Tuesday: Quick and Easy Crock Pot BBQ Chicken (Made with the leftover chicken from the rotisserie chicken) with Crock Pot Cilantro Lime Corn
Wednesday: Savory Crock Pot Pork Shoulder with leftover sides from Monday and Tuesday
Thursday: Easy Creamy Crock Pot BBQ Pork (You can use your leftover pork shoulder instead of the canned pork.) with Crock Pot Bacon Baked Beans
Friday: 3 Ingredient Crock Pot Pork Steaks with leftover Bacon Baked Beans
