How to Make Creek Potatoes and Peppers in a Crock Pot

I can’t take credit for thinking up the idea of these amazing Crock Pot Creek Potatoes and Peppers. Cris was the one who suggested I add peppers to my Crock Pot Creek Potatoes recipe. I am so glad she did! The bell peppers add an extra pop of flavor that is delicious!
When you make your aluminum foil boat, it needs to be pretty big. If you have an extra wide roll of aluminum foil, you could probably just use one piece to make your boat. However, I had a 12 inch wide roll. To make my boat, I used two pieces (one for the bottom and one to close up the top). So you can make this recipe with whatever size of foil you have in your cabinet.
What You Need for Crock Pot Creek Potatoes and Peppers
Ingredients Needed
- 4 medium size Russet potatoes, peeled and sliced thinly, divided
- 1 medium onion, sliced, divided
- 8 pieces bacon, divided
- 1/2 green bell pepper, sliced, divided
- 1/2 red bell pepper, sliced, divided
- salt and pepper to taste
Equipment Needed
- Vegetable peeler
- Sharp knife (I have had this knife for more than a few years and sharpen it after I wash it with this sharpener, and it still cuts through a potato so easily after years of use! - Cutting board
- Aluminum foil
- 6 quart crock pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high

Crock Pot Creek Potatoes and Peppers
Ingredients
- 4 medium Russet Potatoes peeled and sliced thinly, divided
- 1 medium onion sliced, divided
- 8 slices bacon divided
- 1/2 red bell pepper sliced, divided
- 1/2 green bell pepper sliced, divided
- Salt and Pepper to taste
Instructions
- Take your piece of aluminum foil and press it into your 6 quart slow cooker insert to make a boat that goes up the sides of your insert.
- Spray your foil boat with cooking spray.
- Layer 1/2 your thin potatoes slices in the bottom of your foil boat and sprinkle with salt and pepper.
- Spread out half of your onion, green pepper and red pepper slices on top of your potatoes.
- Lay 4 of your bacon slices on top of everything.
- Repeat layers and close up your foil boat. (If you need to put a second piece of foil on top to close up the boat, that is perfectly fine.)
- Cover and cook on low for 4-6 hours or 2-3 hours on high. (It is done when your potatoes are fork tender.)
