How to Make Dublin Coddle in a Crock Pot

We were recently asked by a reader, Donna, if we could make a crock pot version of this Traditional Dublin Coddle recipe. I had never had Dublin Coddle before and thought it would be fun to give it a try in a crock pot. My family raved about this recipe and went back for more. It is that good!
If you take a look at the original recipe, you will see that I made some changes to fit my family’s preferences. I don’t think they greatly impacted the end results, which were amazing. You can take a look at the original recipe and compare the ingredients to see which list of ingredients would be best for you and your family. However, one change I did make that I would recommend keeping is the order you put things in your crock pot. I put the potatoes on bottom so it would be easier for them to cook up and not turn brown since this recipe is being cooked in a crock pot.
What You Will Need for Crock Pot Dublin Coddle
Ingredients Needed
- 1 lb bacon, fried and cut in half
- 2 onions, sliced
- 1 tablespoon butter
- 5 good quality pork sausages
- 2 leeks, sliced
- 5 potatoes, peeled and cut into large cubes
- 2 bay leaves
- 2 sprigs of thyme
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- Ground black pepper
Equipment Needed
- Skillet or griddle (to fry your bacon)
- Tongs
- Large, deep skillet (for browning sausages and cooking onions)
- Wooden spoon
- Vegetable Peeler
- Sharp knife
- Cutting board
- Measuring cups
- Garlic press
- 6 quart crock pot
Time Needed
- Prep Time: 35 – 45 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high

Crock Pot Dublin Coddle
Ingredients
- 1 lb bacon
- 2 medium onions sliced
- 1 tablespoon butter
- 5 good quality sausages
- 2 leeks sliced
- 5 medium Russet Potatoes peeled and cut into large cubes
- 2 bay leaves
- 2 sprigs fresh thyme
- 1/4 cup fresh parsley chopped
- 2 cloves garlic minced
- 3 cups chicken broth
- ground black pepper
Instructions
- Fry your bacon, cut slices in half and set aside.
- While your bacon is frying, melt your butter in a large, deep skillet over medium heat and add your sausages to brown them, turning them a couple times so they are browned all around.
- Remove sausage from the skillet, cut into slices and set aside.
- Add your onions to the same skillet the sausages were in, cook over medium heat until just softened and set aside.
- Put your potato cubes and leek slices in bottom of a 6 quart crock pot and sprinkle with black pepper.
- Add your onion slices, sausages, bacon, garlic and chopped parsley and sprinkle with black pepper.
- Pour your broth over everything.
- Top with your bay leaves and thyme sprigs.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- Remove bay leaves and thyme before serving.

This is one of my favourite fall dishes. I use shallots instead of onions and I deglaze the pan with Magners cider after sauteing the shallots and garlic.
