How to Make Meatloaf for Two in a Crock Pot

I have always loved meatloaf, and this Crock Pot Meatloaf for Two recipe is adapted from one of my favorite meatloaf recipes. It comes together in 10 minutes or less and tastes amazing. We loved having it ready when we came in from sledding.

When I made this recipe, I used a lean ground beef. Since I do not have a rack that fits in my smaller slow cookers, using a lean ground beef kept it from being too greasy. I am also happy to report that the meatloaf was moist and flavorful.

I tried this recipe in both my 2 Quart Slow Cooker and the 2.5 Quart Small Casserole Crock Pot. I have noticed that my small casserole crock pot cooks cooler than any of my other small slow cookers. So, when cooking this recipe, my small casserole crock pot took closer to 5 hours, and my 2 Quart Crock Pot was done closer to 4 hours. Make sure you watch your slow cooker closely the first time you make it so that you can know exactly how your unit cooks this recipe.

What You Will Need for Crock Pot Meatloaf for Two

Ingredients Needed

  • 1/2 lb lean ground beef
  • 1/2 cup oats or cracker crumbs
  • 1 egg
  • 1/4 cup white onion, diced
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons ketchup
  • Additional ketchup for topping

    Ingredients

    Instructions

    • Put 1/2 lb lean ground beef, 1/2 cup oats or cracker crumbs, 1 egg, 1/4 cup white onion (diced), 1/4 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons ketchup in a medium mixing bowl and mix with a stirring spatula, meat chopper or your hands until everything is well combined.
    • Spray a 2 Quart Crock Pot or 2.5 Small Casserole Crock Pot with cooking spray.
    • Press your ground beef mixture into your crock pot and make a groove down the middle.
    • Top with as little or much ketchup as you desire.
    • Cover and cook on low for 4-6 hours.
