How to Make Mississippi Mud Brownie in a Crock Pot

Dude. This Crock Pot Mississippi Mud Brownie is just as amazing as I remember Momma’s Mississippi Mud Cake when I was a kid. Man, it was my favorite dessert when I was little. There is a reason for that. It is beyond amazing!
So, this recipe is a “made from scratch” recipe. If you are new to cooking and/or baking, do not let that scare you. Made from scratch sounds super hard, but this recipe makes it as easy as following directions. The steps are not super hard. You can do this. If you are a seasoned cook or baker, you will take one look at this recipe and be delighted with how easy it is to put together a phenomenal dessert!
Like I said before, this recipe is one that I have loved since I was a kid. However, Momma always made it in the oven, and somehow she ended up with two crazy daughters that started a crock pot cooking website, so she helped me make this into a crock pot recipe. So, let us all give Momma a big ol’ thank you!
What You Will Need
Ingredients Needed for Crock Pot Mississippi Mud Brownie
- 2 cups granulated sugar
- 1 cup solid vegetable shortening
- 1/3 cup baking cocoa
- 1 cup chopped pecans
- 4 eggs
- 1.5 cups all purpose flour
- 1 tablespoon vanilla (Helpful Tip: If you can’t find your tablespoon measuring spoon, it is the same as 3 teaspoons.)
- 1/4 teaspoon salt
- 14 oz marshmallow cream (2 – 7 oz jars)
Ingredients for Icing
- 1 cup butter (2 sticks)
- 2 teaspoons vanilla
- 1/2 cup baking cocoa
- 16 oz powdered sugar
- 1/2 cup evaporated milk
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 hours on high
- Icing Prep and Cake Cooling Time: 30 minutes
- Refrigeration Time: Overnight (optional)

Crock Pot Mississippi Mud Brownie
Ingredients
- 2 cups sugar
- 1 cup solid vegetable shortening
- 1/3 cup baking cocoa (for cake)
- 1 cup chopped pecans
- 4 large eggs
- 1.5 cup all purpose flour
- 1 tablespoon vanilla extract (for cake)
- 1/4 teaspoon salt
- 14 oz marshmallow cream (2 – 7 oz jars)
- 1 cup butter softened
- 2 teaspoons vanilla extract (for icing)
- 1/2 cup baking cocoa
- 16 oz powdered sugar
- 1/2 cup evaporated milk
Instructions
- Grease and flour a 6 quart slow cooker
- In a large bowl, mix together your sugar, vegetable shortening, 1/3 cup cocoa, pecans, eggs, flour, 1 tablespoon vanilla and salt until smooth
- Spread your batter into your slow cooker
- Cover and cook on high for 2 hours, turning your insert halfway through if your slow cooker doesn't cook evenly
- Ten minutes before your cake is done, spread your marshmallow cream on top, cover and cook the remaining 10 minutes
- Remove your insert from your unit to cool
- Mix together your remaining ingredients and let sit until cake is cooled
- Once your cake is cooled, ice your cake
- If desired, refrigerate your cake overnight (this makes it super yummy!)
