Crock Pot Pepper Jack Potatoes for Two

The original recipe I based this Crock Pot Pepper Jack Potatoes for Two off of is a favorite in my home, so I thought I would make it for two!

How to Make Pepper Jack Potatoes for Two in a Crock Pot

These Crock Pot Pepper Jack Potatoes for Two are easy to throw together and taste amazing! If you are like my mom and have excellent knife skills, you can use a knife to cut up your potatoes quickly. However, if you are like me, a good mandoline comes in very handy to keep the prep time down. A word of advice, if you have a sharp mandoline, you will also want a good pair of cut resistant gloves. Safety first!
We like these yummy potatoes just as they are. However, you can adjust this recipe to your preferences. If you want a thicker sauce, you can add another slice of pepper jack cheese. Keep in mind that this will also add in a little extra heat. Whatever way you make them, I hope you love them as much as we do!

What You Will Need for Crock Pot Pepper Jack Potatoes for Two
Ingredients Needed
- 2 medium russet potatoes, washed and sliced thin
- 1/4 cup sour cream
- 2 tablespoons butter, sliced
- 1/4 teaspoon garlic salt
- 3 slices pepper jack cheese
- 1/2 cup milk
- Salt and pepper to taste
Equipment Needed
- Sharp knife and cutting board or mandoline
- Spoon
- Measuring cups
- Measuring spoon
- Small 2.5 Quart Casserole Crock Pot, 2.5 Quart Crock Pot OR 3 Quart Crock Pot
- Stirring spatula
Time Needed
- Prep Time: 7 to 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring halfway through the cooking time (The potatoes are done when they have reached desired tenderness.)

Crock Pot Pepper Jack Potatoes for Two
Ingredients
- 2 medium Russet Potatoes washed and sliced
- 1/4 cup sour cream
- 2 tablespoons butter sliced
- 3 slices Pepper Jack Cheese
- 1/4 teaspoon garlic salt divided
- 1/2 cup milk
- Salt and Pepper to taste
Instructions
- Spread out 2 medium Russet Potatoes (washed and sliced) in the bottom of a Small 2.5 Quart Crock Pot, 2.5 Quart Crock Pot OR 3 Quart Crock Pot.
- Top your potatoes with 1/4 cup sour cream, 2 tablespoons butter (sliced), 3 slices Pepper Jack Cheese (broken into small pieces) and 1/4 teaspoon garlic salt.
- Pour 1/2 cup milk all around your layers.
- Cover and cook on low 4-6 hours or high for 2-3 hours, stirring halfway through the cooking time.
- Gently stir your potatoes and sauce until the sauce is well combined before serving. Salt and Pepper to taste each serving.
