In our house, we are not morning people. Anyone else? However, my kids seem to think that they should be fed breakfast every single morning! Can you believe it?! ๐Ÿ˜‰ So if I can have breakfast waiting for me to serve up when we get up in the morning, like with this delicious oatmeal, I am one happy momma! And I have one happy family! We loved the flavor of the strawberries and the creaminess of the cream cheese in this recipe. Yum!

Ingredients

  • 1 lb strawberries washed and sliced, more if desired for garnish as well
  • 1/2 cup sugar
  • 1 cup steel cut oats (do NOT use quick oats or old fashioned oats)
  • 8 oz pkg cream cheese cubed
  • 1 3/4 cups milk
  • 1 1/2 cups water
  • 1 tablespoon vanilla extract

Instructions

  • Place a heat-safe glass bowl inside your 6-quart crock pot and add water outside of the bowl until it reaches halfway up the bowl.

  • Add all ingredients inside the bowl, except cubed cream cheese, and stir.
  • Place cubed cream cheese evenly on top.
  • Cover and cook on low for 8-10 hours.ย 
  • Stir well before serving.
  • Top with additional fresh sliced strawberries, if desired.

    This was an instant hit in our house! Works out perfect, my husband works swing shift, so when I go to bed I make it he comes home can eat and go to bed, or if he’s on days I can make it at night and on that early winter morning he can eat a nice warm breakfast before he leaves for work… as though I’ve slaved all morning! Love it!
