Next up in our tried and true recipes we are revisiting is this Crock Pot Tortellini Soup. I highly recommend this recipe if you are looking for a flavorful soup that is incredibly easy to put together. This dump and go recipe also cooks up quickly with a two hour cooking time on the high setting.

The original recipe (which you can check out here) has a more chicken broth than this recipe and just a little less tortellini. These changes were made just because of the package sizes I had available at my grocery store. I went with two 32 oz cartons of chicken broth and a 19 oz bag of frozen tortellini since that is what my store had, and it was great. If you want more broth, you can always add in a third carton of chicken broth.

I also changed the directions. This was actually by accident. I was feeling under the weather and taking care of two kids who felt the same when I made this recipe and misread the recipe. I threw all the ingredients of the recipe (except the garnish), including the tortellini, in the crock pot. The original recipe has you cook the tortellini separately and add it at the end. Once I realized my mistake, I was worried I had messed it up. However, the tortellini was perfect when I checked it at two hours. Whether you use the original recipe or this one, I hope you love it as much as we do.

What You Will Need for Crock Pot Tortellini Soup

Ingredients Needed

  • 64 oz chicken broth (2 – 32 oz containers)
  • 10 oz package frozen chopped spinach, kept frozen
  • 30 oz canned diced tomatoes with basil, garlic and oregano (2 – 15 oz cans)
  • Salt and pepper to taste
  • 19 oz frozen cheese tortellini, kept frozen
  • Shredded mozzarella cheese or parmesan cheese as garnish

  • Cooking Time: 2 hours on high, stirring once or twice during cooking

Ingredients

  • 64 oz Chicken Broth (2-32 oz containers)

  • 30 oz Cans Diced Tomatoes Basil Garlic and Oregano (2-15 oz cans) (or Diced tomatoes and add BGO on your own)
  • Salt and Pepper to taste
  • 19 oz Frozen Cheese Tortellini kept frozen
  • Shredded Mozzarella or Parmesan garnish

Instructions

  • Combine all ingredients in slow cooker, except your cheese garnish, and stir until well combined.
  • Cook on high for 2 hours, stirring once or twice.
  • Garnish bowls of soup with cheese.
