How to Make Easy Blueberry Breakfast Cake in an Oven

This Easy Blueberry Breakfast Cake is the oven version of a favorite crock pot recipe I made years ago. It isn’t a made from scratch recipe, so it is pretty simple to make. However, the end result is anything but simple. The muffin mix, butter, brown sugar and cinnamon all combine to give you a wonderfully flavorful treat!
I wanted to give you a head up about the crumble on top. It will look like it has disappeared. That is perfectly normal. As the cake bakes and the butter melts, the crumble sinks down into the cake to give you wonderful little buttery sweet surprises of flavor as you eat it. I hope you and your loved ones enjoy this as much as we do in my home!

What You Will Need for Easy Blueberry Breakfast Cake (Oven Recipe)
Ingredients Needed
- 7 oz package of blueberry muffin mix, divided
- 1/4 cup milk
- 1 large egg
- 1/4 teaspoon ground cinnamon
- 1/3 light brown sugar, packed
- 1/3 cup butter, softened
Equipment Needed
- Medium to large mixing bowl
- Small mixing bowl
- Measuring cups
- Stirring spatula
- Pastry cutter or two knives
- 8 x 8 baking dish
Time Needed
- Prep Time: 10 minutes (plus however much longer it takes your oven to preheat to 400 degrees Fahrenheit)
- Cooking Time: 15 minutes, until the top is turning golden and the center can pass the toothpick test

Easy Blueberry Breakfast Cake
Ingredients
- 7 oz pkg of Blueberry Muffin Mix divided
- 1/4 cup Milk
- 1 large Egg
- 1/4 teaspoon Cinnamon
- 1/3 cup Brown Sugar packed
- 1/3 cup Butter softened
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Set aside 1/3 cup of 7 oz pkg of Blueberry Muffin Mix in a small mixing bowl.
- Spray 8×8 baking dish with non-stick cooking spray.
- In a medium to large mixing bowl, mix together remaining muffin mix, 1/4 cup Milk, 1 large Egg and 1/4 teaspoon Cinnamon until fully combined.
- Pour the batter into the prepared 8×8 baking dish.
- Add 1/3 cup Brown Sugar and 1/3 cup Butter (softened) to the blueberry muffin mix that was set aside and cut together until mixed thoroughly and crumbly.
- Sprinkle crumble mixture over batter.
- Bake for 10 minutes at 400 degrees Fahrenheit, turn the baking dish and cook for an additional 5 minutes. It is done when the top is starting to turn golden and the center passes the toothpick test.
