This Easy Crock Pot Beefy Veggie Soup is comfort in a bowl. The prep work is pretty simple and can be done in 10 minutes or less. The crock pot does all the work for you. There are quite a few ingredients in this recipe, and it fills up the crock pot pretty high, so giving it a good stir a few times helps to make sure everything cooks evenly.
This recipe is really good on its own. However, if you want to serve this with a side of crusty bread, I think that would be a really good idea. Whichever way you have it, I hope you enjoy this as much as we do.

What You Will Need for Easy Crock Pot Beefy Veggie Soup
Ingredients Needed
- 1 lb beef stew meat
- 5 red potatoes, washed and cut into cubes
- 16 oz bag of baby carrots
- 12 oz bag frozen corn, kept frozen
- 10 oz bag frozen peas, kept frozen
- 24 oz brown gravy (2 – 12 oz jars)
- 30 oz tomato sauce (2 – 15 oz cans)
- 1 cup tomato juice
- Salt and pepper to taste
Equipment Needed
- Sharp knife
- Cutting board
- Kitchen Scissors
- Safety edge can opener
- Measuring cup
- Wooden spoon
- 6 Quart Crock Pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low, stirring halfway through the cooking time, if possible

Ingredients
- 1 lb stew beef cubed
- 5 medium red potatoes washed and cubed
- 16 oz bag baby carrots
- 10 oz bag frozen peas kept frozen
- 12 oz bag frozen corn kept frozen
- 24 oz brown gravy (2-12 oz jars)
- 30 oz tomato sauce (2-15 oz cans)
- 1 cup tomato juice
- Salt and Pepper to taste
Instructions
- Put 1 lb stew beef, 5 medium red potatoes (washed and cubed), 16 oz bag baby carrots, 10 oz bag frozen peas (kept frozen), 12 oz bag frozen corn (kept frozen), 24 oz brown gravy (2 – 12 oz jars), 30 oz tomato sauce (2 – 15 oz cans), 1 cup tomato juice and Salt and Pepper to taste in a 6 Quart Crock Pot and stir until well combined.
- Cover and cook on low for 6-8 hours, until tender, stirring occasionally.
