When you are looking for a delicious, aromatic, comfort food recipe to come home to, I highly recommend you try this wonderful Crock Pot Chicken Vegetable Soup recipe. While this is not a dump and go recipe (like this recipe), the little bit of prep work is worth it. Between the chicken, the vegetables, the seasonings and the broth, the flavor is mouthwatering. And when I say that this recipe makes your home smell amazing, I mean it! You do not need an air freshener when you are cooking delectable recipes like this!
I highly recommend servings this soup with some crusty bread. You can pick up a loaf at your local grocery store or bakery. Another option is to make this delicious bread in your crock pot or oven!
Sidenote: My picky eater actually chose leftovers of this soup over pizza last night. It really is that good!
What You Will Need for Crock Pot Chicken Vegetable Soup
Ingredients Needed
- 2 lbs boneless, skinless chicken tenderloins
- 3 medium russet potatoes, washed, peeled and sliced thin
- 2 cups carrots, washed, peeled and sliced
- 1 cup celery, sliced
- 1 /4 cup diced onion
- 1 teaspoon ground sage
- 1 1/2 teaspoons dried rosemary leaves
- 1/2 teaspoon dried thyme leaves
- 3 cloves garlic, minced
- 5 cups chicken broth
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Garlic press
- Stirring spatula
- 6 Quart Slow Cooker
- Large bowl
- Two forks
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through the cooking time
- Additional Time: 5 minutes to shred the chicken

Crock Pot Chicken Vegetable Soup
Ingredients
- 2 lbs Chicken Tenders
- 3 medium Russet Potatoes washed, peeled and sliced thin
- 2 cups carrots washed, peeled and sliced
- 1 cup celery washed and sliced
- 1/4 cup diced onion
- 1 teaspoon ground sage
- 1 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 3 cloves garlic minced
- 5 cups chicken broth
Instructions
- Put 2 lbs Chicken Tenders, 3 medium Russet Potatoes (washed, peeled and sliced thin), 2 cups carrots (washed, peeled and sliced), 1 cup celery (sliced), 1/4 cup diced onion, 1 teaspoon ground sage, 1 1/2 teaspoon dried rosemary, 1/2 teaspoon dried thyme, 3 cloves garlic (minced) and 5 cups chicken broth in a 6 Quart Slow Cooker and stir until well combined.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once the veggies and chicken are cooked to desired tenderness, put the chicken in a bowl and shred with two forks.
- Return the shredded chicken to the soup and stir until well combined.
