I used barbecue baked beans the first time I made this recipe, but they aren’t always available in my area. So, I started using Bush’s Brown Sugar Hickory Baked Beans, since they are always available at my local grocery store. Whether you use the barbecue baked beans or the brown sugar hickory baked beans, the results are incredible. You are sure to have a hearty stew that will be loved by all at your table, young and old alike. What is even better is that it is stew, so it is even better the next day!

What You Will Need for Easy Crock Pot Chuck Wagon Stew

Ingredients Needed

  • 1 to1.5 lbs beef stew meat (depending on what size of package you can get, my package was 1.3 lbs)
  • 13 oz package kielbasa, cut into one-inch slices
  • 1 small white onion, chopped
  • 3 medium russet potatoes, peeled and cubed
  • 28 oz can brown sugar hickory baked beans, undrained

Equipment Needed

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 6 to 8 hours on low or 3 to 4 on high, stirring everything halfway through the cooking time, if possible, to help everything cook evenly

Ingredients

  • 1.25 lbs stew beef (You can use 1-1.5 lbs, depending on what size of package is available, my package was 1.3 lbs.)
  • 13 oz Kielbasa cut into 1 inch slices
  • 1 small white onion chopped
  • 3 medium Russet Potatoes peeled and cubed
  • 28 oz can barbecue baked beans undrained

Instructions

  • Put 1.25 lbs stew beef, 13 oz Kielbasa (cut into 1 inch slices), 1 small white onion (chopped), 3 medium Russet Potatoes (washed, peeled and cubed) and 28 oz can barbecue baked beans (undrained) in a 6 Quart Crock Pot and stir until well combined.
  • Cover and cook on low for 7-9 hours or on high for 3.5-4.5 hours, stirring halfway through the cooking time, if possible, to help everything cook evenly.
  • Give it a good stir before serving.

    Sounds good except for the baked beans LOL! I’m not a bean person but I wonder if maybe draining off 2 small cans of boiled peanuts and adding in a bottle of Sweet Baby Ray’s would work as a substitute. Another option that might work is throwing in a couple cans of Manwich Bold and skipping the beans.
