How to Make Pesto Tomato Chicken in a Crock Pot

This recipe came from me looking at Crock Pot Garlic Tomato Chicken recipe and thinking, “Hmmm…I wonder if I could add pesto to this?” The answer is, yes. Yes, you can, and it is delicious! This Pesto Tomato Crock Pot Chicken is so flavorful on top of being super simple to make. It can definitely stand on its own as a main dish. It could also be served over pasta or rice or on a bun or wrap. I also think this may freeze pretty well. So, I am going to give it a try. Once I know for sure, I will come back and update this post to let you know how it went.
Just in case you are wondering, this recipe is a huge hit with my family. My hubs has raved that this recipe is incredibly delicious and one of his new favorites. My kids gobbled it up and asked for more. As for me, I had it for dinner last night and wanted it again for lunch today. It is that good!
What You Will Need for Pesto Tomato Crock Pot Chicken
Ingredients Needed
- 2.5 lbs boneless skinless chicken thighs (If you prefer chicken breast meat, you can just cut the chicken breasts into thigh size pieces to keep the same cooking time.)
- 10 oz jar basil pesto
- 30 oz canned diced tomatoes, undrained (2 – 15 oz cans)
- 1 small yellow onion, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- Options for serving, if desired: cooked rotini, cooked rice, your favorite wraps or buns
Equipment Needed
- Small stirring spatula
- Can opener
- Sharp knife
- Cutting board
- Garlic press
- 6 Quart Slow Cooker
- Two forks
- Anything you need to prepare rotini or rice, if you are serving the chicken with it
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, rotating your insert halfway through cooking if your slow cooker does not cook evenly
- Shredding of chicken: 5 minutes

Pesto Tomato Crock Pot Chicken
Ingredients
- 2.5 lbs boneless skinless chicken thighs (If you prefer chicken breast meat, you can just cut the chicken breasts into thigh size pieces to keep the same cooking time.)
- 30 oz diced tomatoes undrained (2-15 oz cans)
- 1 small yellow onion chopped
- 1 clove garlic minced
- 10 oz basil pesto
- salt and pepper to taste
- prepared rotini, prepared rice or your favorite wraps or buns if desired, for serving
Instructions
- Put 2.5 lbs boneless skinless chicken thighs in your 6 quart crock pot.
- Add undrained 30 oz diced tomatoes , 1 small yellow onion (diced), 1 clove garlic (minced), 10 oz basil pesto and salt and pepper to taste on top of the chicken.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, rotating your insert halfway through cooking if your slow cooker does not cook evenly.
- Remove your chicken from the crock pot and shred with two forks.
- Add your shredded chicken back into your sauce in your crock pot and mix well
- Serve this recipe on its own or with prepared rotini, prepared rice or your favorite wraps or buns.
