If you have read many of my posts, you know that I am all about getting the most bang for my buck when it comes to feeding my family (well, and just about anything really!). That is one reason I LOVE cooking a whole chicken. Talk about getting the most for your money!
Whole chickens are also good for the holidays. Say your family isn’t a fan of turkey or maybe you don’t need a huge bird (or want a ton of leftovers!), go ahead and make up a whole chicken instead!
However, I do admit that there was a time when I was intimidated by cooking a whole chicken…really intimidated. Cris talked me into trying a recipe, assuring me that it was super simple. I was still apprehensive, but (as much as it pains me to say it 😉 ) she was right! So, if you are like I was and a tidbit afraid of cRockin’ up a whole chicken, rest easy! Really Good Whole Chicken Recipes

Cris and Mike have always raved about their Mississippi recipes, so I couldn’t help but want to try and make a Crock Pot Mississippi Whole Chicken. It was delicious…well, at least the one taste of it I got before Michael started in on it and guarded the leftovers like a hawk! I think he may have liked it!

Put a crockpot liner in the pot. I chop up onions, carrots and celery and put in the pot….about 2 inches high. Barely cover with water. Top with a whole salt & peppered chicken and cook on low 8 hours. Take chicken out of the pot and let cool till you can strip the carcass. ( I then use the chicken to make enchiladas). I put all the chicken scraps back in the pot, add 4 cups water and cook on low for 12 hours (overnight). The next day, i poke holes in the bottom of the slow cooker liner and drain all that good stock into a large bowl. Then measure out 2 cups at a time and place in zip lock bags and freeze. Homemade stock!! Each ziplock equals about 1 can of stock. Oh, and I save the carrot chunks from the scraps. My dogs love them!!
