This Slow Cooker Chicken Pot Pie is incredibly easy to put together. If you need an even faster prep time when you are going to put this recipe on, you can cut up your chicken ahead of time and have it in the fridge ready to go for when it is time to put your recipe on. Then you can just dump all your ingredients in the crock pot, stir, cover and let the crock pot do the work.

Besides being super simple to throw together, it also tastes amazing. I knew how good this recipe tastes, so I thought I would take it down to my mom and dad’s for dinner one night. After we all had a serving, which everyone raved over, my kids were highly disappointed to find out I was leaving the leftovers for Memaw and Papaw. Both have asked me repeatedly to make it again for our house. It is that good!

What You Will Need for Slow Cooker Chicken Pot Pie

Ingredients Needed

  • 3 cups chicken broth
  • 21.5 oz cream of chicken soup (2-10.75 oz cans)
  • 1 1/2 cups milk
  • 2 lbs boneless, skinless chicken, trimmed and cubed
  • 2 cups frozen peas and carrots
  • 1 teaspoon salt
  • 1.5 teaspoon pepper
  • 4 Tablespoon cornstarch
  • 4 Tablespoon water
  • Biscuits, baked

Equipment Needed

  • Sharp knife
  • Cutting board
  • Measuring cups
  • Measuring spoons
  • Can opener
  • Stirring spatulas
  • 6 quart slow cooker
  • Small bowl
  • Fork
  • Medium saucepan
  • Whisk
  • Whatever you need to make your favorite biscuits

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 3 hours and 30 minutes to 4 hours and 30 minutes on low or 1 hour and 45 minutes to 2 hours and 15 minutes on high, stirring halfway through cooking
  • Additional Cooking Time: approximately 10 minutes (It may take longer if you want a thicker sauce.)

  • Put your uncooked cubed chicken, peas and carrots, cream of chicken soup, chicken broth, milk, salt and pepper in a 6 quart slow cooker and stir well.
  • Cover and cook 3 hours and 30 minutes to 4 hours and 30 minutes on low or 1 hour and 45 minutes to 2 hours and 15 minutes on high, stirring halfway through cooking.
  • Once hot and bubbly, remove 3 cups of gravy.
  • Place gravy in saucepan over medium-high heat.
  • Mix water and cornstarch together.
  • When gravy comes to a boil, add cornstarch and water mixture.
  • Stir continually until gravy reaches desired thickness.
  • Once the gravy thickens, remove from heat and pour back into crock pot and stir well.
  • Serve over baked biscuits.
