How to Make Homemade Mississippi Mud Cake in an Oven

There are three desserts that were always epic to me as a kid, and the list still rings true as an adult. This Homemade Mississippi Mud Cake is one of them. It is a rich dessert that is like a mix of a brownie and a cake. I highly recommend cutting this cake into 16 pieces instead of 12. It is truly rich, but the flavors are just incredible. With it having so many servings in just a 9×13 dish, it makes it a great dessert to take to a potluck.

What You Will Need for Homemade Mississippi Mud Cake (Oven Recipe)
Ingredients Needed for Cake
- 2 cups sugar
- 1 cup solid vegetable shortening (the brand name for this is Crisco)
- 1 1/2 cups all purpose flour
- 1/2 cup baking cocoa
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 4 eggs
- 13 oz tub marshmallow creme
- Cooking spray
Ingredients Needed for Icing
- 1/2 cup butter, softened
- 16 oz powdered sugar
- 1/2 teaspoon cocoa
- 1 cup chopped pecans
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
Equipment Needed
- Measuring cups
- Measuring spoons
- Stirring spatula
- Stand mixer or large bowls and hand mixer
- Medium bowl
- Fork or whisk
- 9 x 13 baking dish
- Oven mitts
- Cooling rack
Time Needed
- Prep Time: approximately 15 minutes
- Cooking Time: 20 minutes at 350 degrees Fahrenheit, plus an additional 10 minutes after you spread the marshmallow creme evenly across the top
- Cooling Time Before Icing: approximately 30 minutes

Homemade Mississippi Mud Cake
Ingredients
Cake Ingredients
- 2 cups sugar
- 1 cup solid vegetable shortening (Crisco is the brand name version)
- 1/3 cup baking cocoa
- 1 cup chopped pecans
- 4 large eggs
- 1.5 cup all purpose flour
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 13 oz marshmallow creme
Icing Ingredients
- 1 cup butter softened
- 2 teaspoons vanilla extract (for icing)
- 1/2 cup baking cocoa
- 16 oz powdered sugar
- 1/2 cup evaporated milk
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, cream your sugar, vegetable shortening and 1/3 cup cocoa.
- In a separate bowl, blend together your flour and eggs.
- Add flour mixture to the creamed mixture and beat well.
- Blend in 2 teaspoons vanilla extract. (Your batter will be very thick.)
- Lightly spray a 9×13 baking dish with cooking spray and spread your batter evenly in the dish.
- Bake at 350 for 20 minutes, turning your baking dish halfway through cooking if your oven doesn't cook evenly.
- Remove cake from oven and gently spread the marshmallow creme evenly across the top.
- Bake for an additional 10 minutes.
- Place your baking dish on a cooling rack and let it cool (approximately 30 minutes).
- While your cake is cooling, mix together all the icing ingredients.
- Once your cake is cooled, ice your cake and cut into 16 pieces.
