My favorite summer meal is a squash & hamburger skillet dish served over rice with a side of pan fried okra.
I love cooking bacon wrapped chicken tenderloins with cream of chicken soup. No other seasonings are needed. I then chop and put on a salad. Everyone loves it.
My favorite summer meal: A full dinner salad meal. A large standard salad, ingredients of your choice. I use Romaine, celery, onions, cucumber, tomato and fresh radishes. Braded chicken strips (done in the Ninja), and hard boiled eggs ( I use the pressure cooker on the Ninja to cook the eggs). dressing of your choice. I try to have this meal every week or so. I serve it all in separate bowls so everyone can take as much as they want of each ingredient. Very satisfying.
Summer Dinner Crockpot Giveaway Comment: my dinner idea is to take advantage of the Summer’s Wonderful Fruits and Vegetables: especially from Farmer’s Markets and Home-Grown Roadside stands. The idea is: Summer Vegetables of your choice, with beef, and your favorite Teriyaki Sauce, crock-potted, with a side of rice or even Thai Noodles. The Thai noodles are like Top Ramen soup– just pour hot water over them and soak for 15 minutes in a bowl. For Dessert: Sautรฉed Apples in heavy cream and sugar, served with vanilla ice cream! The idea is: “No-Stove” Summer Vegetables; of your choice; with Beef made in a crock pot with your favorite Teriyaki sauce and rice, OR use easy Thai noodles (just pour hot water over rice noodles and let sit for 15 minutes) the Love Plate! For Dessert: Warm Sautรฉed Apples in sugar and heavy cream, served with vanilla ice cream.
Crockpot BBQ ANYTHING! Chicken, ribs, sausage… it gets really hot and humid here in Texas – too hot for me to fire up the grill, and too hot even to fire up the oven. But anything in the crockpot is good for all seasons, but a definite life/heat saver in the summer. Even my old 5qt crockpot has a crack in the bottom of the pot, I use the disposable liners to keep it going bc I use the crockpot at least 3-4 times a week all yr ’round. ๐ Crockpot = Life-saver!
I like to make the crock pot baked beans that my Mom used to make. She got the recipe from a co-worker and she made them every holiday season. Now that she is gone I carry the tradition but also make them for the summer holidays as well.
I am 82 years old and live alone so I like to make up larger casseroles either in the crockpot or the oven and I then have enough for several meals so I do not have to spend a lot of time in the kitchen every day when it tires me so. I have tried several of your recipes and love them all. Thank you so much for giving us such a variety to choose from and that are usually easy to make.
I Love doing chicken breasts in the crock pot. You can shred it for sandwiches, or cube it for chicken curry, or slice it for on top of a salad. Very versatile and tasty!

Smothered Pork Chops with Garlic Mashed Potatoes and Bacon Green Beans. That’s my favorite summer meal.
