Ever since I was a kid, these Easy Cheesy Potatoes have been one of my absolute favorite side dishes. When Momma would make them, I would get so excited! So, now I make them for my family, and guess what! My kiddos adore this recipe just as much as I did (and do! ;)). They are so cheesy and flavorful. If a person likes cheese and potatoes, this recipe is going to be a quick favorite!

What You Will Need for Easy Cheesy Potatoes (Stove Top Recipe)

Ingredients Needed

  • 6 medium size Russet potatoes, peeled and cubed
  • Water (enough to cover your potatoes in the pot)
  • 1/3 cup diced onion
  • 8 oz Velveeta, cubed (If you have a 32 oz block, it will be 1/4 of the block.)
  • 1 cup milk
  • Salt and pepper to taste

Time Needed

  • Prep Time: 5 to 10 minutes (this varies depending on how quickly you can peel and cube potatoes
  • Cooking Time: approximately 8 to 10 minutes on high until your water comes to a boil, reduce heat and cook on medium high for an additional 10 to 15 minutes, until they reached desired tenderness
  • Additional Time Needed: Approximately 5 to 7 minutes to drain the potatoes and stir in the ingredients to make the cheese sauce

Ingredients

Instructions

  • Peel and cube 6 medium Russet Potatoes and place them in a medium to large pot.
  • Add 1/3 cup diced onion on top of the potatoes.
  • Cover the potatoes with water and cook on high until they come to a boil. (It took about 8 to 10 minutes for mine to come to a boil.)
  • Reduce the heat to medium high for an additional 10 to 15 minutes, until your potatoes have reached desired tenderness.
  • While your potatoes and onion are cooking, cut 8 oz Velveeta into small cubes, set aside.
  • Drain the potatoes and onions and return them to the pot.
  • Add in your Velveeta cubes and 1 cup milk, stirring gently until the cheese has melted completely.
  • Salt and pepper individual servings to taste. (A little bit of salt will really make the flavors pop.)
